Their claim of having devised a means of freezing and thawing sushi rice sheets without effecting the flavor or texture sound rather suspect, but if they pulled it off they are going to be super-rich. Sushi rolls are a huge seller all over the world and it's creating the wrap that's the hardest and most time consuming part. These could make fresh sushi rolls a staple in the home kitchen as well

That's true.  Rice (long grain white rice) is a staple of southern cooking, and is more common than mashed potatoes as a delivery vehicle for fried chicken gravy, etc.

Damn.  Nearly dinnertime.  Now I gotta make rice.

Subby laughs. But I am now inspired to make a collard green sushi wrap that will unseat the seaweed sushi wrap monopoly. Collards are GDMF delicious.

Enjoy your NC sushi wrap and rice sheets with whatever seafood your local sushi restaurant calls fresh.

Problem with collards IMO is they aren't vegetarian friendly. I'm a consummate carnivore, but I do try to make vegetarian friendly dishes and every time I have tried making Collard Greens without some form of animal fat they just fall flat

Personally I prefer Ham Hocks for the source of fat + smoke flavor, which I believe is traditional, and rightly so

Have you tried finishing with vinegar?  (wine vinegar is best, but malt will do)

You can add it to the pan if you're just wilting them, but if you're cooking them traditional style, sprinkle on the vinegar like a condiment after plating.  It will make them pop, meat or no.

Also, add some umami to replace that lost to omitting the smoked meat.  Sautee some mushrooms and onions in the bottom of the pan/pot before adding the greens and liquid.  Or just sprinkle in a pinch of MSG.

Is bacon salt vegetarian?

And you also assume sushi is only made and sold at resturants
Have you not ever seen the plethora of shiat-tier sushi rolls for sale at your local grocery store?

Don't confuse the larger metro area with Raleigh.  Sure Cary and Morrisville are not the south, but Garner, ITB Raleigh, and Fuquay, etc. are.
