Do not like or try things I don't like or was good enough for grandma.

Some of it will go away as just a stupid fad (anyone remember tuna in jello?).  Some will stick, filter through to the "regular" folks...and American 'cuisine" will benefit from it.

I love mushroom stock (tea?).  I make it fairly often.  Have for years.

I, for one, welcome this development.  I would love to see more mushrooms available at the supermarket.  My mother made cream of morel soup when I was a kid and I really miss it.  I don't live near cheap morels these days.

Everybody biatches about hipsters this and hipsters that.  I don't know who did it, but food and booze are about 100 times better than what they were 15 years ago.  The only boogeyman in that period of time was hipsters.

I can't blame the yuppies.  It's been 20 years since they were the undefined, amorphous socioeconomic group to blame for trends in consumer society that we don't like.

People b*tching about "hipsters" are really just b*tching about other people having more disposable income than them. It was the same thing with yuppies. And before that, dandies and fops.

The core motivation behind all this "OMFG look at what these [insert vague, undefined segment of society here] is doing!!11" is class envy. Always has been, always will be.

People weren't mad at "hipster" "millenials" for eating avocado toast because they think avocado toast is a crazy concept or disgusting, they were mad at them because they themselves can't afford things like that.

Of course, the ironic thing is that it's almost always people who otherwise think money is a sign of power who think this, but the idea that the monied class isn't always old, white father figures upsets their delicate world view. Hence, they hate "hipsters" or "beatniks" or whatever they choose to call them.

All this said, if I'm drinking mushroom tea, it better be of the magic variety.

There is usually a good idea at the core of a food fad.  Problem is, you follow the fad, and you end up paying 10x more than you should due to price gouging.

Best to note the fad, wait until the faddies perfect it and get bored with it, and then try it.

I've had woodear and oyster mushrooms delivered to my house by grocery delivery.

Tasty bastards. And I dehydrate some of them so now I have plenty in a pinch.

All snark aside, in the coming decades when global warming, population growth, and other factors drive innovation in food production like converting buildings into urban, vertical greenhouses, and if we ever get our shiat together and get out into space, mushrooms and related plants will probably play a huge role. Quick and easy to grow, can be eaten as-is as well as being incredibly versatile. They're already used in everything from drinks to desserts, and that's just because people want to, not because they have to.

I tried chaga tea recently so getting a kick. It makes a fuller tea compared to some other herbs that just don't diffuse into water via tea bag real well. Taste was pretty earthy.

oh good. If all of my logs fruit this year I'm on pace to grow about 50 pounds of shiatakes and 20 pounds of wine cap mushroom. Where all these hipsters who will pay me top dollar

I'm old enough to remember when portobello mushrooms were The Next Big Thing back in the 90s.

Those were dark times.

Hey, friends - if your blender is good enough, you can take dried shiatake mushrooms (available from your Asian grocers) and basically pulverize it until it is a super-fine powder. You can use it as a shiatake seasoning powder while cooking - adds umami when you need it.

Just as a warning - while you are blending, the powder will get everywhere.

I make a soup base with mushrooms, tomatoes, onions, etc that I've dehydrated and pulverized. Layers of flavor and it doesn't take much.

Yeah, I've had a portobello that tasted like a medium rare steak after it was cooked. The goddamn thing was beauty to behold.

I grew up with kale, and it is one of the few vegetables thingies that will happily grow right on the coast, so I've always eaten kale, cooked, then seasoned with a little vinegar (collard greens, on the other hand...I do not like eating anything that requires a pressure cooker to eat it).

Living in perfect mushroom growing land, the wet part of the PNW, I'm getting a kick out of this.   Commercial chanterelle  hunting has been pretty cut throat for years.

So much Kale hate. What's the taste in kale that drives you all nuts? I personally can't taste anything in it unless it's alone, and even then it's just the merest hint of "bitter sort of green." At the same time brussels have always seemed bitter enough to make me retch.

I've never had the pleasure, but it's def on the bucket list. I spent a lot of time out in the desert looking for it in my youth though. Saw some really cool shiat.
