I can think of two useful things. Release of carbon dioxide off permafrost and release of methane of methan hydrates

making an observation is part of the scientific method. Every freshman has suspected that drinking a beer with a straw gets them more drunk. So you drink beer under controlled condition using grant money to test some hypothesis, the CO2 did it. It is pure chance that the cute grad student is never in the control group.

My mentor had grants he got renewed every year to study biker culture and Klingon culture. They paid for his annual trips to Sturgis and GenCon.

I figured having little grants like this is typical.

SodaStream is for chumps.  Get a 5lb CO2 tank, a regulator, and some carb caps.  If you've got a bit of extra cash spring for some kegs so that you can move to big boy batches.  Check out homebrew forums for more info in starting a keging setup and bottling from a keg.  Check with your local gas shop before buying your own tank.  Many of them will only swap tanks (vs filling), so you don't want to waste money to trade in a shiny new tank.
