I've been known to substitute a prescribed time of fairly high heat for sub-freezing cold.

It's not icky, but instead of dairy in my mashed potatoes, I use hummus.

Once I made a Red Velvet cake with a little cranberry sauce instead of red food coloring. Nobody could tell ;)

I sometimes use greek yogurt in my mashed potatoes.  It's nice.

When I'm on a veg bender I substitute smoked mushrooms for bacon, guanciale or pancetta in Amatriciana.

I did cabbage steaks this week, turned out a hell of lot nicer than normal boiled cabbage (yech.) I guess with enough teriyaki sauce you can make anything turn out edible, even boring winter vegetables.

Not really a substitution, but when making chili, I will add some Marmite to the pot at the end the onion/pepper saute, right before the beer goes in to deglaze. Adds a great umami boost.

I like to use crushed fried onions instead of breadcrumbs in my meatloaf, which might seem icky to someone who doesn't like fried onions.

Used to toss in a cup or so of bran when making waffles or pancakes.  Kids didn't know the difference and it just seemed healthier - probably wasn't but what the hell.

According to Saint Julia, you can use vermouth in any recipe calling for wine. I've had fine success with that, and as a result, go through vermouth faster than I would otherwise (which is good, because it can get stale within a few weeks of opening).

If you take a whole head of cabbage, quarter it, just plain old wedges... coat the cut sides in some butter, sprinkle on some garlic salt and pepper, wrap in foil, grill for like 15-20 minutes (rolling em over a few times), you can tell when they're done by squeezing the foil and feeling for the amount of give you want.

Those farkers are delicious

I accidentally put some curry in my chili instead of chili powder..That was kind of a happy accident
that worked out ok in the end..Not a lot went in..I realized it was curry right away..so maybe one
quick shake..

Spaghetti sauce from a jar gives me three days of heartburn, and fresh tomatoes are pretty expensive in the desert, so I started using zucchini for spaghetti sauce. You just have to put in some vinegar and lime or lemon juice to get the acidity correct.

You also need a high tolerance for greenish spaghetti sauce. My sister's kids couldn't deal with it, but my dad, who had recently developed a tomato sensitivity, thought it was great.
