But if this is such a great physics demonstration, why don't they use this for propulsion systems? In short, it doesn't work very well. Sure, the water gets pushed-but you could do much better with just a propeller

ummmmmm. Pilots navigate the Alps in planes with windows pretty much every day. If you remove the windows, it becomes a challenge requiring hyper-accurate surveys and a stopwatch.
