I know wine & cheese go well together, but I have always been curious as to which beers & cheeses would go into tasters menu, a bock & or stout with a nice soft chedder or stilton? Or is it just Pabst & Cheez-Whiz(c)?

As one having savored the caramel-flavored, brown cheese of Norway, I feel I must share this with my fellow farkers.

Brown cheese, which comes in several variants, is made from goat milk. The color varies from mauve (sp?) to dark brown. (I like the dark brown, called gudbrandsdal cheese, best)
Brown cheese is not as solid as normal cheese, and may break apart or smoulder. For best results, use a norwegian cheese slicer.
The taste is sweet, almost a cross of chocolate and caramel, but not quite.

When norwegians are abroad, this is what they miss most:
A tall glass of cold milk, and a freshly baked slice of whole wheat bread, with butter and thick slices of brown cheese.

I'm suddenly feeling hungry...

I've had brown cheese. It's pretty good, but only after you stop thinking of it as Cheese. It gets cooked for a while and the sugars (lactose?) caramelize(sp?), so it really is like caramel but not nearly as sweet.

Also, about the black market for cheese: I think there would be a black market for just about anything in norway cuz shiat there is real expensive , think canadian cigarettes.

Halpas, cant beat cheez-whiz on a cheese steak! You should give THAT a try. (YUMMMM)

When I was in Paris, they sent a cheese tray around too all the tables in the restuarant. I was shocked to see everyone eating off of the same tray. "Sharing" if you will. I thought, UGH! But, you know, when in Rome.....
