ZAZ: A Canadian gave me some cheddar from a place in eastern Ontario that doesn't do mail order, you have to drive hours from anywhere to buy it in person. I wonder if it was this place.

It's so underground the people who eat it have never heard of it.

I have had St. Albert's Cheese. It's a shame to lose a cheese factory. There used to be one in every small village or town back in the days before the railroad and highway networks concentrated the industry into the hands of giant corporations.

When I was a kid, small country stores would have a cheese wheel with a damp cheesecloth over it, from which they would cut cheddar cheese to order. The cheese was old and crumbly and had ten times the flavour of anything you pull out of a refrigerator. Mind you, my taste buds are not what they were as a child, but even allowing for that, this was good artisanal cheese that was never touched by plastic wrap.
