Even if the insurance premiums were like 50k a month, the insurer is taking a huge gamble that anyone who is stupid eccentric enough to pay that much is going to show good judgement while driving it.

I know that anyone who could afford to buy one could probably declare it "self insured", however, the law doesn't allow for you to drive around without insurance.

When you're rich enough to afford cars like these, you insure it yourself. But to your point about commercial insurance, it's not a huge gamble because it's the insurance company's business to know what the actuary tables say is the increased likelihood of a crash, random fire, or vandalism, and set the price point for the premiums accordingly. They might lose money on this car on a single policy, but in the aggregate across all their clients, they don't. The house always wins.

Also, the market for cars like these is pretty limited and so is the insurance market.  The person who buys this super car is probably already a client with a policy for many other super cars. The point is that the insurance company already knows that particular client's propensity for making claims on super cars. Also, when a super or exotic car is totaled, the undamaged parts are very valuable in the resale market.  Know what the value of a Ferrari 308 turn signal wand is? Between 1k to 3k.
