Watch the video and brine it first. Duck and smaller chickens are easy to brine in plastic bags in the fridge. Turkeys usually require a 5 gallon clean (clean!) Home Depot bucket, and a lot of fridge space.
If you'd rather do duck instead, Alton Brown's recipe there is another can't lose method of brine -> steam -> pan sear. Plus, there's all the yummy rendered duck fat.


Or a 5 gallon bucket, 14lbs of ice, a heavy rock and a porch where the overnight temp should be right around 34.

Agree whole heartily on Craftsteak. The atmosphere is even worse. I have yet to find a decent steakhouse on the strip.


Take a little trip to Hank's, it's damm good

Garlic burns pretty easilly and will taste acrid. I stick garlic inside the bird.

A couple of the recipes he's devised suck. He's an entertaining guy to listen to, but there are literally thousands of actual chefs who are better at cooking food.

Thomas Keller isn't english - he was born in Oceanside California. And his roast chicken is incredible (make it once a week).

/if you are ever in Vegas - hit Kellers Bouchon at the Venetian. Its incredible food which you don't have to pay a ton for and have to wait years to get a reservation


It's amazing how good (and simple) roast chicken is. I've started blow drying it before preparing for the oven...really gets the skin crispy. God, I love crispy chicken skin.

Agreed. I go garlic (and shallot) inside. And you don't need more than olive oil, salt, pepper and whatever herbs you like (Thyme and rosemary for me).

Might not be a workable solution for you, but i have yet to find anything that makes chicken better than a rotisserie for your backyard grill (yes, even one with propane, as sacrilegious as that sounds)

I like it simple: butter, salt, pepper, garlic powder and let her spin low n' slow. Done right it gets you crispy skin all around.

And buy your chicken from a chicken farm if you can. It does make a difference.

I am a big fan of his show and own his books, but I have to agree with the above.

I generally go to his stuff for southern cooking (biscuits, etc) and I do like his chocolate chip cookies. And I have graduated to The Professional Chef for most technique questions.

My personal all-purpose brine base: 3 TBSP kosher salt for each quart of water/liquid. Add flavors as you wish. Sit for at least 4 hours.

The man drives me crazy, but having made both his and Alton's turkeys... I liked the BF one better. I am so sorry, I feel dirty admitting it because I love Alton's information, humor, and recipes... but the brining really is not nescesary.

A good rub and frequent basting does it better. Sure it's more involved and not the best apprach if you don't want to spend the time in the kitchen, but if you can do it, the results are incredible!

The Good Eats / AB Brined Turkey is the BEST turkey I've ever had.

I can't imagine going back to another recipe now.

We had to order our meal pre-cooked this year. There was no way in hell I was going to pay for a dried-out, chemically preserved, salty half a carcass of a turkey when I could have a prime rib roast.

I will take a poorly-prepared roast over a poorly prepared turkey anyday. Just give me some horseradish and jus and red wine. Amen.

Keller is the only American chef to have been awarded simultaneous three star Michelin ratings for two different restaurants. Never farking mind that they are on opposite coasts.

I've never even heard of the guy before this video, and love Alton Brown's Good Eats series, but it's not even close.

I tried a recipe where you separate the skin from the meat with a spoon and stuff it with an herb/butter mixture. Do it carefully to prevent tearing and just the breasts to the legs.
Holy shiat was it tender and juicy. Of course, stuff the cavity as needed but it penetrates the meat rather than seasoning the skin which kinda prevents it. It really, seriously infuses the meat with whatever herbs and spices you use, plus the butter helps :)

Jacques Pepin has a video on youtube--I think it's Anthony Bourdain's show--that demonstrates deboning a chicken in two minutes. Then you just stuff the hell out of it, roll it up and roast it.

I can't get enough Pepin. I'm still not satisfied.

I make a paste of herbs de provence, salt, pepper & olive oil and rub it on the outside of the chicken. Salt and pepper on the inside along with a squeeze of half a lemon. Then I throw the rind inside the cavity before I roast it.

You could do the same thing with a can of Coke, or even just take an empty can and fill it 2/3 full of white wine (you don't need anything expensive; Two-Buck Chuck is fine). Feel free to experiment a little.

Try pickle juice. Brine AND cook at the same time!

get peanut oil. Get turkey. Deep fry turkey in peanut oil. Viola! Great thanksgiving with a nod to the traditional. Bonus points, then deep fry your rolls in that oil.
