Marbled Easter Eggs

After boiling the eggs and letting them cool, crack their shells all over, enough to crack them, but lightly enough that the shells aren't coming off. Place each egg in a bag with food coloring, and let them sit for 15-30 minutes. Splash vinegar on them (which I forgot), then rinse off and peel the shells. Et voila, marbled eggs!

PB&J - Kid Style




Two slices of fresh, soft white bread. Preferably soft enough that it sticks to the roof of your mouth.
Jif Peanut Butter, creamy
Welch's Grape Jam (it spreads better than jelly)
Milk

Spread peanut butter on one slice of bread and jam on the other. Put the sticky sides together and enjoy. Note - the milk should be ice-cold and the glass refilled as needed.

Cake Pops
Bake a 9x13 cake (from a box is fine) any flavor. Let cool then crumble into medium pieces or smaller into a large bowl. Add 1 can of frosting, any flavor that compliments the cake, and mix well. Roll mixture into balls about the size of a ping pong ball. place on a cookie sheet or tray and place in the freezer for 15 minutes then move tray to the refrigerator. While the cake balls are chilling make the candy coating. Melt candy making pieces (any color and flavor that compliments your cake) according to the package directions and add a ½ tsp of crisco. Take cake balls out of fridge when candy coating is melted. Dip stick into candy coating about ¼ inch then push into the cake ball until it is in center of cake ball. Then dip cake ball into melted candy coating and allow to drip off while very gently tapping the stick. When access candy coating is off, roll in topping or sprinkle with topping to decorate. Allow to dry by pushing stick into styrofoam block. Store in airtight container in refrigerator.

French Toast - Step #2



Crack eggs and add a little milk and a coupla dashes of vanilla extract.
Whisk together.
Coat sliced bread and fry on a hot skillet.
Serve hot with plenty of butter.

Oh yeah. What is Step #1? --> Before starting to cook French toast (or pancakes) MAKE SURE THAT YOU HAVE ENOUGH SYRUP! It sucks to figure out that you're almost out of syrup after you have already started cooking. That's why I have an emergency bottle of syrup hidden in my office. SRSLY.

Soft Taco Bake



1/2 lb. Ground Turkey
2 medium sized peppers (diced)
1 small red onion (diced)
4 Baby Bella mushrooms (sliced and diced)
6 oz. Pepper Jack cheese (shredded)
6 oz. Chipotle Cheddar Cheddar (shredded)
Enchilada Sauce (8 oz. can)
Tortillas/Wraps
Salsa
Taco Seasoning: Cumin, Ground Chipotle, Chili Powder, Tomato Bouillion (season to taste, add crushed red pepper for heat)

Olives & Jalapenos (Optional)

Prep time: 15-20 minutes

1. Pre-heat Oven to 375 F
2. Brown Turkey and Peppers with seasoning
3. Add Onions & Mushrooms
4. Add 1/3-1/2 cup salsa
5. Simmer until mixture is less watery
6. Pour a thin layer of Enchilada sauce in the bottom of a pie pan
7. Place a tortilla or wrap on the bottom
8. Add a layer of Meat/veggie mixture, top with shredded cheese and a little enchilada sauce
9. Repeat steps 7&8 2-3 more times (depending on the depth of pie pan and amount of mixture you made).
10. When you're nearly out of meat/veggie mixture place one last tortilla/wrap on top. Add the last bit of mixture, add more salsa and top with cheese
11. Bake 7-10 minutes (if you can wait that long, longer if you want some crispy cheese)
12. Garnish with olives and jalapenos
Cut and serve (will be sloppy if you absolutely CANNOT wait).

Notes: You can substitute commercial taco seasoning in a pouch for my homemade mix. Pepper and salsa are opportunities for more or less heat. You should not use the entire can of enchilada sauce unless you want a really sloppy meal; you're going to use about 1/3 of an 8 oz. can.

from the top: japanese pickles made by marinating thin cucumber slices in rice vinegar, salt, and sugar and serving sprinkled with ponzu sauce, sesame seeds, and green onion; salmon marinated in sake, mirin, soy sauce, and lemon slices for several hours and then broiled (could also be grilled), served with a slice of lemon and grated daikon; crisp steamed asparagus with a tofu dressing made of silken tofu, maple syrup, peanut butter, rice vinegar, olive oil, and lemon juice.

Chicken and Beef Kabobs. (normally done on outdoor grill, but thunderstorms dictated indoor grilling)

1 lb chicken breast
2 small beef filets
1 Yellow Squash
1 Zucchini Squash
1 Green Bell Pepper
12 pearl onions
(substitute meat and veggies according to personal taste)

Marinade:

1/4 cup olive oil
2 tablespoons sesame oil
2 tablespoons garlic powder (or crushed fresh garlic)
3 tablespoons sea salt
2 tablespoons yellow curry powder
1 tablespoon onion powder
1 tablespoon Chinese 5-spice

Stir marinade ingredients in a bowl, set aside. Dice meats into 3/4 inch cubes. Place in separate bowl. Slice veggies into bite-size pieces, peel onions, and place in their own bowl. Coat meat and veggies with marinade, turn to coat thoroughly. Allow meat to marinate for at least 2 hours unrefrigerated, or 6 hours refrigerated. Veggies can remain at room temp for up to 6 hours.

Skewer alternating meats and veggies. Keep veggie marinade for basting, toss out the meat marinade (raw meat juices are a no-no).

Grill over medium heat until chicken is cooked completely, basting as needed after turning skewer.

Serve and enjoy immediately!

Bacon As Far As The Eye Can See



Making a breakfast of: scrambled eggs, toast, beans, bacon, and pan-fried potatoes. I'll assume everybody knows how to make this stuff--not exactly rocket surgery. The only noteworthy things I can think of are: (a) cook the bacon in the oven, on a cookie sheet, and (b) note to self--let the potatoes fry for a good 5-10 min before adding the onions. They (onions) came out a bit too dark and crispy this time ... though still edible.

Katharine Hepburn Brownies
Ingredients: 1 stick (8 tablespoons) butter
2 squares unsweetened chocolate
1 cup sugar
2 eggs
1/2 teaspoon vanilla
1/4 cup all-purpose flour
1/4 teaspoon salt
1 cup chopped walnuts (optional)

1. Melt together 1 stick butter and 2 squares unsweetened chocolate and take the saucepan off the heat.
2. Stir in 1 cup sugar, add 2 eggs and 1/2 teaspoon vanilla, and beat the mixture well.
3. Stir in 1/4 cup all-purpose flour and 1/4 teaspoon salt. (In the original recipe, 1 cup chopped walnuts is added here as well.)
4. Bake the brownies in a buttered and floured 8-inch-square pan at 325°F for about 40 minutes.
You can cut these brownies into squares, once they have cooled, and eat them out of the pan, but it is so much nicer to pile them on a fancy plate, from which people are going to eat them with their hands anyway. If you want to smarten up your act you can put a square of brownie on a plate with a little blob of créme fraîche and a scattering of shaved chocolate.

Pork Fried Rice
1 (6 ounce) boneless pork loin chop, cut into 1/2 inch pieces
1/4 cup finely chopped carrot
1/4 cup chopped fresh broccoli (we skipped because broccoli is eww)
1/4 cup frozen peas
1 green onion, chopped
1 tablespoon butter
1 egg, beaten
1 cup cold, cooked long-grain rice
4 1/2 teaspoons reduced-sodium soy sauce
1/8 teaspoon garlic powder
1/8 teaspoon ground ginger

In a large skillet, saute the pork, carrot, broccoli, peas and onion in butter until pork is no longer pink. Remove from skillet and set aside. In same skillet, cook and stir egg over medium heat until completely set. Stir in the rice, soy sauce, garlic powder, ginger and pork mixture; heat through.
We also saute the pork in Ah-So (new window) sauce because it makes the pork more like restaurant pork.

Chicken Parmesan w/ "Homemade" Sauce



Sauce
1 Can Hunt's Spaghetti Sauce
Fresh frozen tomatoes
1 Decent-sized pepper (diced)
5-6 large shiatake mushrooms (sliced and diced)
1 smallish onion (diced)
1-2 tsp.Italian seasoning mix (add extra pinches of oregano and basil to taste)
Crushed red pepper (to taste)

Combine in pan and simmer for 2-4 hours


Chicken Parmesan
Boneless skinless Chicken Breast (1 per diner)
Equal parts Italian seasoned bread crumbs & Parmesan cheese (1/4 cup each per 2 breasts)
Oregano, Basil, Black Pepper (season to taste... be generous)
Olive Oil

1. Combine crumbs, cheese and seasonings in a bowl, toss with fork until evenly mixed
2. Thoroughly coat chicken breasts, set aside
3. Start spaghetti water. Heat oil in frying pan (about medium to medium-low heat)
4. When water is boiling and spaghetti is in, oil should be hot enough.
5. Gently place coated chicken in fry pan. Sprinkle more coating mix over top. Cover, wait 2-3 minutes.
6. Turn Chicken. Add more coating to bottom. Cover, wait 2-3 minutes.
7. Repeat 5&6 until chicken is thoroughly cooked.
8. Drain spaghetti when cooked.
9. Serve - spaghetti, sauce, chicken; garnish with mozzarella.

Prep Time: Sauce: 2-4 hours (mostly just simmering), Chicken & Spaghetti: 15 minutes

Notes: "Homemade" is in quotes as it requires a can to start it, If you do not like Hunt's sauce, any jar of sauce will do. If you really want a challenge, make your own sauce from scratch. If you don't grow your own tomatoes, use 1 14.5 oz. can diced. Try to time hot oil and boiling water in step 3-4, as grease fires are bad. Low heat and covering chicken reduces possibility of charred coating.

Lemon Drizzle Cake, via Jamie Oliver

• 115g unsalted butter, softened
• 115g caster sugar
• 4 large free-range or organic eggs
• 180g ground almonds
• 30g poppy seeds
• zest and juice of 2 lemons
• 125g self-raising flour, sifted

for the lemon syrup
• 100g caster sugar
• 90g lemon juice

for the lemon icing
• 225g icing sugar
• zest and juice of 1 lemon

Preheat the oven to 180ºC/350ºF/gas 4. Grease and line the bottom and sides of a 20cm springform cake tin with greaseproof paper.

Using an electric whisk, beat the butter with the caster sugar until light and creamy. Add the eggs one by one, beating each in well. Fold in your ground almonds, poppy seeds, the lemon zest and juice and the sifted flour. Spoon the mix into the prepared cake tin and bake in the preheated oven for 40 minutes or until lightly golden.

Make your lemon syrup by heating the sugar and lemon juice in a pan until the sugar has dissolved. While your cake is still warm, make lots of little holes in the top with a cocktail stick and pour your syrup over.

To make your icing, sift the icing sugar into a bowl and add the lemon zest and juice, stirring until smooth. When your cake is almost cool, put it on a serving plate and pour the icing carefully over the top. If you pour it on to the middle of the cake, then let gravity disperse the icing down the sides, you get the 'drizzle' effect! Give it a helping hand with a spoon if you want.

Smoked Ribs and Sausage

Next to religion, politics, and football, BBQ is probably the next-most debated topic in history. Here's how I prepare mine.

2 pork loin back rib racks
2 polish sausage links

Rub Ingredients:

1 cup honey
1/2 cup brown sugar
1/4 cup soy sauce
1/8 cup sea salt
3 tablespoons Hungarian paprika
3 tablespoons ground pepper
3 tablespoons granulated garlic powder
2 tablespoons onion powder
Dash of Chinese 5-spice
Red pepper flakes to taste.

Mix everything into a paste, coat the top of the ribs until soaked, double-wrap in plastic bags and refrigerate overnight.

For smoking, I use the 2-2-1 method, but adjust according to rib thickness, cooking temps, etc to keep them from drying out.

2-2-1 means 2 hours of dry heat and smoke, basting every 30 minutes with the juices from the marinade bag, followed by 2 hours of wet heat (water in the smoker pan, or sealing the ribs in foil), and then 1 hour of dry heat with smoke, out of foil to add a nice crust (be careful not to overcook or dry out for the last hour).

I smoke pork ribs over hickory at about 185 degrees. Beef is done over mesquite.

The sausage can be added just for the last hour, since it's already fully cooked.

Serve with whatever sides you like.

Wipe hands on pants.

Repeat.

Salmon in parchment paper
Preheat oven to 400 degrees. Butter or oil the paper and an oven proof dish. Place the fish filet next to the fold line.

Cook for 5 to 6 minutes or until the paper puffs. Snip one side of the paper and serve with the vegetables.
Stir-fry Vegetables
1 large carrot 1 stalk celery
1 or 2 radishes cauliflower florets
broccoli florets cherry tomatoes
Slice or cut vegetables to uniform size. Heat 1 or 2 Tbls sesame oil (or any oil of your choice) in a wide flat pan or wok, then add the vegetables to the pan - toughest ones first. Stir with a spatula to coat with the oil until they just begin to wilt a little. I put the tomatoes in at this point. Lower the heat. Season with a little soy sauce and cover the pan and cook a little longer until crisp tender.

Beef Rib Roast
Remove roast from refrigerator 1 or 2 hours before cooking time. Preheat oven to 550 degrees. Place on rack in roasting pan and place in oven. Immediately reduce heat to 350 degrees. Roast 18 - 20 minutes per pound for medium rare. I use an instant read thermometer and check temp. after minimum time.
145 degrees is medium rare. It will cook a bit more while standing as you finish gravy and side dishes. 2 to 3 servings per pound.

BBQ Chicken Pizza



Pizza Shell(s)
Boneless Skinless Chicken Breast(s) (Diced into 1/4" cubes)
Pepper (Diced)
Onion (Diced)
Mushrooms (Sliced and Diced)
BBQ Sauce
Cheese (Pepperjack & Colby Jack)
Olive Oil

Prep Time: 15ish minutes

1. In fry pan, brown chicken, add veggies and sauce. Simmer.
2. Preheat Oven to 400 F
3. Brush olive oil onto cookie sheet or pizza pan and pizza shell(s)
4. Once chicken, veggies and sauce are sufficiently hot and simmered down, distribute on shell(s)
5. Top with cheese(s).
6. Bake until cheese is melted (longer if you like crusty cheese)
7. Cut & Serve

Notes: BBQ Sauce brand is of no consequence, but try to avoid Carolina style mustard-based sauces; they're not so good with cheese.

Ciabatta
Sponge:
1/8 t. active dry yeast
2 T. warm water
1/3 c. room temperature water
1 c. flour

Mix together the yeast and warm water, allow to stand for 5 minutes until creamy. Add in the remaining water and flour, stir for 4 minutes, then let sit at room temperature for at least 12 hours, up to 24.

Bread:
1/2 t. active dry yeast
2 T. warm milk
2/3 c. room temperature water
1 T. olive oil
2 c. flour
1 1/2 t. salt

Mix together the yeast and milk, then let stand for 5 minutes. In a stand mixer using the hook attachment, mix the milk mixture, sponge, remaining water, oil, and flour, until just moist. Beat at medium speed for approximately 3 minutes, add the salt, and then beat for another 4. Move to an oiled bowl, and let it rise (this is where I definitely could have let it rise longer - next time I'll wait about 2 hours). After it's gotten nice and big, move onto some floured parchment paper and cut it in half (it will be sticky!). Form two oval-shaped loaves about 9 inches long, dimple with floured fingers, and dust the tops with flour. Let them rise for another 2 hours before moving them into the oven which should be preheated to 425ºF with a baking stone or something similar inside (heat the stone for about an hour before throwing the bread on top). I threw one loaf in at a time because my stone is relatively small, on the parchment paper and all. After 20 minutes, the loaves were nice and golden. Removed from the oven with a spatula, moved to a cooling rack for one hour before cutting in and enjoying.

Chocolate Peanut Butter Bars

Ingredients:

Filling:

one and one fourth (1.25) cups confectioners' sugar
three fourths (.75) cup finely chopped pecans
one fourth (.25) cup butter or margarine, melted
one and one half (1.5) cups creamy peanut butter
one (1) teaspoon vanilla extract

Crust:

one and one half (1.5) cups all-purpose flour
two thirds (.667) cup firmly packed brown sugar
one half (.5) teaspoon baking powder
one half (.5) teaspoon salt
one quarter (.25) teaspoon baking soda
two thirds (.667) cup butter or margarine, softened
two (2) egg yolks, slightly beaten
one (1) teaspoon vanilla extract

one package (12 oz.) semisweet or one package (11.5 oz.) milk chocolate chips

Directions:

Filling: In medium bowl combine confectioners' sugar and pecans. Add remaining ingredients and stir until well blended; set aside.

Crust: Preheat oven to 350 F. In large mixer bowl combine crust ingredients and beat at low speed until crumbly (or use pastry blender or fork). Press crumbs into bottom of ungreased 13x9-inch baking pan. Bake 12 to 15 minutes or until golden brown. Remove from oven; turn oven off.

Let crust cool 2 to 3 minutes. While still warm, spread filling evenly over crust. Sprinkle chocolate chips over filling and return pan to warm oven for 2 minutes or until chocolate has softened. Remove from oven and spread chocolate evenly. Cool on wire rack. Cut into bars. Makes 3 dozen, about 195 calories per bar.


I keep meaning to mail these out to people and they keep mysteriously vanishing before any make it to the post office..

Fish Triangles



Place fresh fish with whatever herbs and seasonings you desire in squares of aluminum foil.
Fold into sealed triangles.
Bake in the flavor.

We made these at Mopsy's last summer with caught-that-day fish. I'm too tired to figure out the actual seasonings, but the fish was great. :)

Easy Dessert
Purchase angel food cake. Cut into 2 layers. Beat whipping cream. Fold in broken heath bar pieces. Spread over bottom layer. Place top layer over bottom layer. Spread whipping cream mixture and top with extra crunch pieces.

Sausage Inna Bun



Based on the famous street food, as made infamous by Mr. "Cut-Me-Own-Throat" Dibbler. Unlike the original version, this sausage has an identifiable meat (chicken) as well as something you'd likely never see in Ankh-Morpork: lettuce. I used the apple cider in the photo as cooking liquid for the sausages. White wine or beer would also work. 40 min@375F in a covered container with about half the cider, then remove cover and cook for 20 min more to brown the meat and reduce liquid. The reduced cider can be used as an "au jus" type dip for the sandwich.

Bavarian Pot Roast

2 lb. beef or pork tenderloin.
2 large white onions
6 whole garlic cloves
2 lb. small yellow potatoes (Danish are the best)
6-10 dill pickle spears
Salt and Pepper to taste
Brown Gravy Mix.

Place meat in center of large roasting pan. Fill pan with whole potatoes, garlic cloves, pickle spears, and large slices of onion. Prepare gravy mix and pour over meat. Pour 2 cups of water into pan. Bake covered for 2 hours at 300 degrees, then uncovered until onions start to brown. Remove from oven and let rest for 15 minutes before slicing meat.

Enjoy!

My first attempt at this pie - it was a hit.

ALTON BROWN'S LEMON MERINGUE PIE

Ingredients
Lemon Filling:

4 egg yolks (reserve whites for meringue)
1/3 cup cornstarch
1 1/2 cups water
1 1/3 cups sugar
1/4 teaspoon salt
3 tablespoons butter
1/2 cup lemon juice
1 tablespoon finely grated lemon zest
1 (9-inch) pre-baked pie shell
1 recipe Meringue, recipe follows
Directions
Adjust the oven rack to the middle position. Preheat oven to 375 degrees F.

Whisk egg yolks in medium size mixing bowl and set aside.

In a medium saucepan, combine cornstarch, water, sugar, and salt. Whisk to combine. Turn heat on medium and, stirring frequently, bring mixture to a boil. Boil for 1 minute. Remove from heat and gradually, 1 whisk-full at a time, add hot mixture to egg yolks and stir until you have added at least half of the mixture.

Return egg mixture to saucepan, turn heat down to low and cook, stirring constantly, for 1 more minute. Remove from heat and gently stir in butter, lemon juice, and zest until well combined. Pour mixture into pie shell and top with meringue while filling is still hot. Make sure meringue completely covers filling and that it goes right up to the edge of the crust. Bake for 10 to 12 minutes or until meringue is golden. Remove from oven and cool on a wire rack. Make sure pie is cooled completely before slicing.

Meringue Topping:
4 egg whites
1 pinch cream of tartar
2 tablespoons sugar
Place egg whites and cream of tartar in the bowl of a stand mixer fitted with the whisk attachment. Beat egg whites until soft peaks form and then gradually add sugar and continue beating until stiff peaks form, approximately 1 to 2 minutes. Use to top lemon filling.

Yield: topping for 1 (9-inch) pie

Bacon Cheeseburger Cake

This isn't a terribly exact recipe; you should be able to adjust according to taste and preferences.

Aluminum pie tins (I like the pot pie size)--you need to poke holes in the bottom to let the grease drain while cooking
1 pound of ground beef (I use 92% lean Laura's Lean Beef--makes enough for 2 pot-pie sized cakes)
1 egg
Diced onions to taste (I use frozen pre-diced ones, cause I'm lazy, and they're convenient)
Cheese to taste (I use mild cheddar...just however much "looks" right)
Bacon bits or regular bacon (I use the bags of real bacon bacon bits--about a bag before cooking)
Salt and/or pepper to taste
Mashed potatoes (I use instant for their smoothness, though I make them with whipping cream and real butter so they actually taste like mashed potatoes and not glue. You can make your own from scratch or buy the pre-made tubs, but they need to be very smooth for the frosting)
Moar bacon or bacon bits, for sprinkles or rosettes

Combine ground beef, egg, onions, cheese, bacon bits/bacon, and whatever seasoning you like. Divide your mixture into the two pot pie tins, and place the pans on top of another pan to catch any draining grease. Bake at 350 degrees until internal temp is around 170 degrees. While the cakes are cooling, prepare your mashed potatoes. With spatula, frost your meat cakes and top with bacon rosettes or sprinkles of bacon bits.

no real recipe for this...I cut some flour tortillas into chip shapes and baked them and layered them on a plate with some beans (refried beans from a can this time, but I often use black beans cooked with chipotle peppers), grated cheddar cheese, chopped onions, green peppers, jalapeno peppers, and lettuce. Then sprinkle some salsa on the top (since it's winter I just used some fancy stuff from a jar; you could also use taco sauce) and perhaps some sour cream if you like.

Because I am decadent I also chopped up an entire avocado and topped the salad with it.

Almond Biscotti
Ingredients:
All purpose flour - 1 1/2 cups
Baking powder - 1 1/2 tsp
salt - 1/4 tsp
Yellow cornmeal - 1/2 cup
unsalted butter at room temp - 8 tbsp
sugar - 1 cup ( I used 3/4)
eggs - 2 large
Pure almond extract - 1 1/2 tsp
almonds , sliced - 3/4th cup

Preparation
1. Center a rack in the oven and preheat the oven to 350 F/ gas mark 4/180 C. Line a baking sheet with parchment
2. Whisk the flour, baking powder and salt together. Add the cornmeal and whisk again to blend.
3. Working with a stand mixer, fitted with a paddle attachment, beat the butter and sugar until very smooth for 3 minutes. (Mine did not become too smooth because it is cold here that even at room temperature the butter was quite solid. I thought at this point, that this project of mine was heading for a doom. But I soldiered on anyways.)
4. Add the eggs and continue to beat, scraping down the sides to incorporate everything. The mixture will turn light and creamy -( BUT mine did not. That didn't deter me. I went ahead like Dorie had got it wrong.)
5. Beat in the almond extract.
6. Now incorporate the dry ingredients in 3 lots and slowly. Let it mix until everything is just combined. Add the almond slices and combine well. ( At this time, I got the sticky dough out and used a spoon to combine the almonds well)
7. Using your hands or a spatula, work the dough into 2 logs about 12 inches long and 1 1/2 inches wide, each. ( I got smaller ones and I think it was because my butter +sugar+ egg mixture wasn't the dream like creamy and fluffy)
8. The logs that you shape will be more rectangular than domed. It will bumpy, uneven and rough.
9. Place both of them with a lot of care into the parchment paper of the baking sheet
10. Bake for 15 minutes or until the logs are lightly golden but still soft and springy to touch.
11. Transfer the baking sheeting to the rack and cool the logs on the baking sheet for 30 mins.
12. If you turned off the oven, bring it back up to 350 F/ gas mark 4/ 180 C AGAIN.
13. Using a spatula transfer the logs to a cutting board after they have cooled for 30 minutes and then using a serrated knife, cut the logs into 3/4 inch thick slices. Return the slices to the baking sheet - this time standing them up and slide the baking sheet back to the oven.
14. Bake the biscotti for 15 minutes, or until they are golden and firm. Transfer them to the racks and cool to room temperature.

2 eggs
1 tbs margarine
1 expensive Emeril Legasse pan.

heat pan very slowly over low flame because it gets too hot very fast if the fires too high!
Melt margarine.
Break eggs and cook to desired firmness.
add bacon, homefries, toast and OJ as needed.

Tostadas (American style, European style tostadas are just toast.)

Ingredients:
corn tortillas left over from enchiladas
garlic powder
seasoning salt

Instructions:
Cut tortillas into 1/6ths
Fry in oil at 375 F until golden brown.
Drain on paper towels.
Sprinkle with garlic powder and seasoning salt

Serve with salsa.

Turkey Bean Pot

1lb of cubed turkey [or chicken breast]
2 tablespoons oil
I onion, chopped
1 red pepper, chopped
1 clove of garlic, crushed
About a tablespoon of flour
1 tin of chopped tomatoes
1 teaspoon ground ginger
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
I tin each of red kidney beans and butter beans
Salt & pepper to taste

Fry the onion and pepper in the oil to soften, add the meat to brown.
Add garlic, but be sure not to allow it brown and go bitter!
Sprinkle in the flour to soak up any juices and thicken sauce.
Add ginger, soy, Worcestershire, season to taste.
Drain and rinse tinned beans, stir into pot.
Either cook gently on hob, or in low oven for about an hour.
Ensure meat is cooked and tender.
Serve over rice or with baked spuds and veggies of choice.

This freezes well, bake a big pot-full and enjoy another time.

Oatmeal cookies
¾ C shortening 1 C dark brown sugar
½ C white sugar 1 egg
Beat together, then stir in ¼ C water and 1 tsp vanilla.
Stir in 1 C whole wheat flour, ½ tsp baking soda and 1 tsp salt.
Add 3 C quick cooking oats, 1 C raisins and ½ C chopped nuts.
Drop teaspoonsful on a parchment lined or lightly greased baking sheet.
Bake at 350 degrees for 12 minutes

portabello mushroom marinated with balsamic vinegar, garlic, olive oil, and herbs is grilled and then chopped up with tomatoes (I used grape tomatoes here) and tossed with roquefort cheese and piled on top of lightly toasted, garlic rubbed ciabatta.

Red Chile Chicken Enchiladas
Ingredients:
20 6" corn tortillas
1 can red chile enchilada sauce
1/2 lb. mozzarella cheese
1/2 lb. Monterrey Jack cheese
1 lb. chicken breasts

Instructions:
Cook chicken and slice.
Grate cheese.
Starting with sauce, layer ingredients into a 9" x 13" baking dish.
Top with tortilla cut with old NMSU logo.
Bake at 350 F until it looks like picture.

Chili
Brown ground beef. Drain. Add large can tomato sauce, dark red kidney beans and lots of chilli powder. Simmer 1 hour. Best served next day.

Insanely simple, but crazy delicious! Take one tub of whipped cream cheese (much much much easier than softening a brick of cream cheese or even using softened cream cheese), plus one can of whole berry cranberry sauce. Place cream cheese on a dish and spoon cranberry sauce all over (I usually use 1/3 to 1/2 a can). I serve with whole wheat Ritz crackers. I know lots of people who aren't huge fans of cranberry sauce on its own, but liked this since it adds just a bit of sweetness to the cream cheese.

Pumpkin Hermit Pudding

1 10"/4"/1" slab vanilla cake
2 single cubes of chocolate cake
1 can pumpkin
3 fun-size Kit-Kats, coarsely crushed
1 fun-size Reese's peanut butter cup, coarsely crushed
1 zest from lemon
1 pinch of flour
1 sprinkle of cinnamon
1/2 can of skim milk

It's not really good, but it's all I had in my flickr stream.
