Pistachio Pesto:

Equal parts pistachios and extra virgin olive oil, a splash of sherry vinegar, and salt to taste (in a food processor).  Great on pasta, pizza, bread, etc.

I was at a function a couple of weeks ago and they served fish with a sort of peanut-based sauce and pistachios. It was surprisingly tasty.

We have a pastry store that specializes in baklava right across the street from us. The ones filled with pistachios are amazing.

I make normal pesto but with pistachios instead of pine nuts (which taste like a combination of aluminum and barf to me).

Costco is worth the annual cost just for the pistachios.

pistachios are great on salad with balsamic. and costco unshelled is the way, keep em in your freezer

7-11 used to sell hot red pistachios by the scoop. They were addicting.

I can remember when the red ones were sold in vending machines, like a peanut or gumball machine.
Used to have those machines in bars.
Near the pickled eggs.
