The last thing I cooked was sloppy Joes and I started with two pounds of ground beef and a pound of chorizo. I just had some. It came out fantastic.

Seriously. Chicken and potato soup is 3-5 pounds of chicken.

Chili is 5 pounds of beef. With the realization I'm gonna be eating it for a second and every day all the things just blend to better even better.

All hail the Dutch oven!

Awesome timing here--made 'Hamburger Soup' tonight. Homesteader-kinda recipe I had over Xmas while up in Montana and was surprised at how warm and hearty it was...and I'm a food snob.

I think I would eat all of these dishes, but if I were going to spend the time to make them I think I would go for a roast or a stew.  Also, pork and chicken take flavors in better than beef of any sort does.

I agree with Johnny Vegas, make a couple burgers with the ground beef.

It's far from warm here in Melbourne, so I took the opportunity to make osso buco (beef, because veal is out of season). The whole house still smells bloody wonderful.

Rooommate taught me this one:

- 1 lb ground beef
- 1 lb frozen veggies (anything you want)
- 1 64 oz bottle Spicy V8
- 1 package Ramon noodles (any flavor)

Lighly brown and drain the ground beef. Add the V8 and veggies. Cumple and add the Ramon noodles. You can add or discard the flavor packet. Heat until everything is hot.

A good, quick soup

My mother's chili started with two pounds of ground chuck, we had a large family.

2 lbs ground chuck, browned
2 cans of tomato soup
2 cans of kidney beans
1 TBS chili powder.

Serve with crackers to soak up the extra sauce.

Yes, I'm from the Mid-west. How did you know?

PS My wife uses Cook's recipe and there's about a half cup of seasonings in it.

Still recovering from the far too frequent use of government beef by my middle-school lunch  ladies:  "chili" (sans spices for economics), pizza burgers, and the infamous "shipwreck" (clean out the walk-in).

Stir until beef crumbles and is no longer pink

stirring until beef crumbles and is no longer pink

So once upon a time, several decades and several gigs ago, I asked a food scientist at the customer why these giant chili kettles I was programming were supposed to only stir for a few seconds every minute or so, and his response was that the chili's better if you don't stir it so much that the beef crumbles into tiny particles. Of course you can't avoid all crumbling, but the aim was little burger-y beef nuggets as opposed to beef paste.

It made sense to me. If I'm making chili with ground beef at home I try to avoid crumbling when I brown the beef, and I like the chonky results.

Some of the names don't fit but I guess they have to call it something. I mean, who puts celery and potatoes on a cheese burger or green beans on a taco?

Money saving tip for buying ground beef.

Always check the meat counter or sale cooler for the in-house/store made, unseasoned pub burgers.  At least at my store, (albertsons owned) they're often on sale. I got 4, 8oz pub burgers yesterday for $6. So 2 lbs of ground beef for $6! When I looked at the regular packages of ground beef in the cooler, they were like $7 a pound for 85/15.

They don't say but are probably 85% but that's okay. I like the fattier ground beef for a lot of things anyway. If I'm actually making burgers I'll use 95% cause they don't shrink as much.

I wish my grocery store were that bad at math. Typically, anything that's been formed into patties or individual portions is priced higher than the basic per pound rate. Makes sense to me, since those require some amount of labor.

Sounds like you've found a pretty sweet deal tho. $3 / lb is a steal these days!

Apologies in advance for the gross image below

Explainer:  I tried to save some money by buying bulk ground beef at Costco. This is what I saw when I started preparing it. They wrapped fresh beef around old beef and passed it off as fresh. I had seen this before at grocery store butchers but this time was particularly gnarly and the quality was really not great.

I cooked it anyway because it went into some heavily spiced dishes that no one else would be eating. It wasn't great, but with enough cooking the funkiness mostly dissipates. Probably won't buy Costco ground beef again.

meat cupola, I was probably either snarking and/or remembering the awful frozen mixed veg of my childhood!

but pre and now post prison, I practically survive on frozen broccoli, cauliflower, cauliflower rice, and mixed onion bell pepper - all from dollar (25) tree.
