I'm still perfecting my French ommelette
My prefered herbs are tarragon, sage, basil, and green onion all fresh, all minced. Trad is no cheese but sometimes I'll grate a little Gouda in the scrambly part before folding.

I had to learn because I can't find a single restaurant that makes them.
