If the leftovers aren't too chunky, then gnocchi is always a good leftover option.  Same with looser purees and soups.

I can acknowledge colcannon as a contender, but for flat out comfort food satisfaction, boxty is where the smart money goes. "Oh, but Kirkenhegelstein," you'll say, 'what about the beer braised cabbage and kale? Those wonderful onions?  The BACON?"  And yes, you'll have a point, but put boxty and colcannon in front of me right now, I'm reaching for the boxty.

Now I want colcannon for dinner, damn your eyes.

Potato patties: Leftover mashed potatoes mixed with finely minced onion, egg, and salt and pepper to taste. Form into patties and fry in butter. Serve with eggs.

One of my dad's alltime favorite meals. Mom always had to make sure she made extra mashed potatoes so there would be leftovers for the next morning.
