I think the cow is in love with the horse and was showing off to impress it. Or maybe the cow wants to fool the humans into thinking it's a horse so we don't eat it.

Wow! I am impressed but also terrified for her safety. She is being super patient, careful, and sensitive, but I also know how temperamental bulls can be.
