I'm pro pasta too!

To be fair, I also don't dislike using Spaghetti Squash as pseudo pasta.  But I'm not one of those dillholes who thinks it's a pasta replacement.  It's just a different dish.

I do remember Mussolini was pushing Italy to eat more rice to show solidarity with the Japanese, but that only led to the creation of risotto.

Mussolini pushed people to make gluten free pasta edible way before anyone else would have gotten the idea.  For that, we should thank his dismembered corpse.

more an opportunist. we got a copy of the english edition of his book decades ago. the way it severed the connection between cuisine and its essential parts like nutrition, pleasure, and socializing and turned the whole thing into weirdly idiosyncratic performance art was just wrong. that's all that really needs to be said about it.

he didn't start off as explicitly fascist, but like all good grifters he was able to find a parade and jump to the head of it sucking up to the guy waving the big baton

I've heard/read the same thing that TFA states, that Mussolini pushed rice because it grew well in Northern Italy and he wanted wheat imports for reasons of making pasta to be reduced.

/Risotto dates back to 1809, apparently.
//Thought occurs that "the Japanese inspired Italians to invent risotto" is pretty much a modern updating of "Marco Polo took pasta back from China".

Italians do tend to be kind of fascist about food. "You used bacon instead of guanciale??? Blasphemy! That's not real carbonara!"

/Spain can get pretty bad when it comes to paella though

A lot of Christians are very unlike their Christ. Why can't an Italian enjoy something other than carbs in gravy?

Especially funny since "traditional" carbonara only dates from WW2 and was probably made with Spam half the time

I wouldn't turn down spaghetti'd squash or, in particular, zucchini -- hell, I make a nice zucchini and rice dish with hot Italian sausage that I quite like; it would just be kind of like that but without the sausage or rice.  But it would be its own thing, and I still prefer pasta.
