These guys are kind of culinary idiots, from other videos I've seen, but that DOES look like a great restaurant.

But your argument is it won't necessarily have to be prepared by someone from America's Hat to be authentic?

This restaurant is a great example of why the term "authenticity" is dumb with regards to cuisine.

There were a couple examples where even the chef clearly knew very little about Mexican food. The one that really stands out is when he pointed out they use corn tortillas, as if that's some sort of surprise.

I gave him the benefit of the doubt on that, because flour tortillas are a thing (even in some regions of Mexico) and I suspect he was catering to two dumdums there who wouldn't know Masa from Masala from Marsala.

His tone and expression did kind of look like he was a bit surprised as well, or at least he was when he first went to that restaurant. On the flipside though, I do completely understand that he might be catering to the two dumdums. I've watched a bunch of their videos, and while I do enjoy them, sometimes their ignorance is breathtaking. I remember a video from awhile ago where they seemed to believe that mac and cheese is only a thing in the South.
