Old, room temp vermouth is terrible. It starts approaching vinegar pretty quickly. But, you can keep a bottle in your fridge and it stays fresh for an extra month or two. Also, to use up that bottle quicker, per Julia Child, vermouth can be used in place of wine in any recipe.
