If you're not planning on eating it, sometimes.

You can just break up the cloves (separating them from the dirty outer layers and roots), smash them, then toss them in when making broth that's going to be strained and not blended.

There are a lot of italian recipes where you sauté the whole or halved garlic cloves in the oil til lightly browned, then remove the garlic ... but usually you peel it first.  This is also recommended for the FODMAP diet

That is true, however...

Fire is your friend. Keep it rare, garlic and rosemary are your friends. Shoulder chops are great, racks are awesome but a little spendy. "Chops" (those mini porterhouses) are excellent too. Pair with grilled 'spurgus.

For slow wet cooking breast is wonderful and cheap for something like a guiness stew or shepherd's pie. Shanks are even better for braising.

I find the skin provides a bit of protection against scorching and/or drying out when roasting, too. As long as you're willing to smash the cloves and fish out the garlic goo afterwards, you can get some pretty awesome flavor boost.

I'm kind of in the same boat, I've cooked ground lamb, but only because of one of those now defunct food/recipe by mail services. It's just not much of a thing sold at least in my part of the mid-west (big beef and pork area). Though now that I've just looked online now I can get lamb shoulder arm chops from the local grocery... don't think I've ever seen a recipe on that cut.

I was a little surprised that he didn't salt the lamb prior to browning it.  In fact, his use of salt looked rather restrained.  Might try that next weekend.

Though now that I've just looked online now I can get lamb shoulder arm chops from the local grocery... don't think I've ever seen a recipe on that cut.


Shoulder can be very hit and miss...and miss...and miss...in terms of toughness/texture.

I pretty much default to braising it unless it looks super lean and there isn't much visible connective tissue.

A really easy starting place is to take something like a red wine & short rib ragout recipe, tweak the spices to the warmer side (a bit of cinnamon, cumin, coriander), and go to town. Finish with fresh mint as the herb. I like keeping the tomatoes on the chunkier side for a more rustic feel, and serving on al dente rigatoni.

Outside of some lamb burgers or meatballs I've never cooked it either. And it's not for a lack of wanting to. My wife just doesn't like lamb.

I managed to get my hands on a leg of lamb many, many years ago around Easter time, and cooked it based on some Basque recipe that I had found in which you made slits every so often and shoved a slice of garlic into each slit.

My mom said she didn't usually like lamb, but liked this one.  I don't know if it was the source of the lamb or the preparation that made the difference.

... although I suspect there was more garlic in the one I did.  (Like 20+ slits, maybe 1/2 to 1/4 clove each)

Yeah. I've done lamb to good effect, but goat is farkin' expensive around here, so I typically reserve it for biryani.

Here's the best starting point I've found for mutton birria.

It's pretty common if you're roasting whole heads of garlic. You just squeeze the garlic cloves out when you're done. Doing it in the skin also helps in preventing the garlic from burning.

If you're doing a confit, then peeling them first is fine, as they're submerged in fat and the temperature is low enough that burning them isn't that much of an issue.

When you're staying in your mom's basement and not going out, there shouldn't be any issues with garlic.  I assumed you just ate whatever your mom cooked for you.

I guess you could microwave a burrito if you're avoiding her.
