I mean a good solid oven fries recipe, well except not too fond on many Herbs de Provence I like the smell of lavender but the taste can be very overpowering.

Never made fries at home but 425 for 45 minutes seems like an awfully long time at that high a temp.

If it's you're standard oven, that's about right.  Convection, on the other hand, would speed that up quite a bit.

Shouldn't it be called "French bakes" instead? I guess I can do the same thing in my air fryer. But 45 minutes! Whew.

We do something similar except with basil, rosemary, and black pepper.

Raw potatoes take a shiatload of cooking. If you were just making baked potatoes it would be the same temp for an hour. Cutting them smaller and tossing them in oil helps change the texture. But I've also seen good recipes that call for boiling the potatoes and then roasting them to make them very crispy.

Ironically, lavender isn't a part of traditional French herbes de Provence. For whatever reason it's common in American interpretations.
