- a few drops of Worcestershire sauce or soy sauce mixed into the beef before you form the patties
- use actual tools to smash the burgers; the easiest is to use two quarter sheet pans and gently press
- only salt right as you stick it on the griddle/frying pan; salt one side, put that side down on the grill, don't put salt on the next side until you flip
- cheese melts better if you shave/grate it instead of slices; also means the cheese melts quickly, which makes timing easier
- fat/mayo goes on the bottom bun to protect against sogginess

Just make sure it's cooked brown all the way through.  A good burger is entirely cooked.  After that it's all basically the same.

My favorite burger joint closed during the pandemic. Rent was too high for take out only.

It was so awesome - they did grilled instead of on a hot top, but it was a charcoal grill. That flavor is just the best thing, but if I'm lighting charcoal I'm doing steaks/a whole tri tip, not doing charcoal for just burgers.
And their fries and shakes were good. Not great, but good.

A buddy of mine has a theory the the best burger joints in a city are next to the University/College in that town. I have had some surprisingly good burgers testing out this theory. The latest was Mr. Sizzle's in Buffalo, NY. It was good eats.

As long as it's been there for a while, if it's near a high school, college, etc. it's going to be at least edible.  Kids/young people got no time for complete horseshiat food, but if you give them reasonable they will keep your in business forever

That was a terrible movie in my correct opinion.

Kudos for trying something different but you didn't just slip on the banana peel, you landed ass-first on a dildo.

It was so bad it made Zardoz look good by comparison.

Ayup.  Used to be a place called Uncle Nick's Falafel right across the street from Pasadena City College.  That place made enough money to pay storefront rent right across the street from the college AND being on the Rose Parade route - both of those things made for some less than trivial rent.  Location location location

There's so many burger joints around here and all the good ones look exactly like that. A couple in Novi, one in Madison heights, even out here where I'm at, such good greasy ass burgers, from a building identical to that one

Shoot, I have duck fat on the fridge.  Gonna try that in 2 days.  Slight threadjack, but I made smash cheeseburgers last week.  With homemade pickled beets, shredded cabbage, and sauce made from mayo, msg and the pickled beet brine. Called it the purple people eater

It absolutely farking is. And for no reason I can think of, duck fat burgers cannot be made without peanut butter, just a tiny little bit slapped on both buns. Those two fats are so farking perfect together.
