skillet steamed sunny side up, warm liquid yolk for the win. eggs, they make their own sauce!

The crispy outside edge of a fried egg is a fine thing and in no way diminishes my enjoyment of the egg.

I'm not picky when it comes to eggs. The only thing I don't like is runny whites, other than that, every egg is fine by me.

I'm a one pan breakfast man. Bacon, eggs, hashbrowns/home fries/starchy side of choice, it's all done in the same pan.

Pan scrambled.

Crack them like you're making sunny side up, let them cook for a bit until the whites turn translucent, then kill the heat and gently scramble them, leaving the whites cooked and yolks mostly runny.

Mixed with butter, regular sugar, brown sugar, vanilla, flour, salt, baking soda, milk chocolate chips, and pecan bits, dropped by the spoonful on baking sheets, then baked at 375F for 9-11 minutes.

2 eggs cracked into a mixing cup.
Add a splash of milk and a dash of flour.
Mix it all up with an immersion blender until it's slightly frothy.
Pour it into a hot, greased skillet, and once it starts to firm up, flip it over.
Top with cheddar cheese and hot sauce.
After a minute or so of cooking, fold it in half like a big taco.
Serve it on a plate topped with home-made chili.

Been doing poached eggs in ramen.  They cook in the broth and they are ready to go without further prep.  I got tired of peeling them.

Scrambled soft, French style, or in a simple omelet (cheese and diced tomato), on a bed of buttered sourdough toast.  Gotta add a dash of salt and a dash of half-1/2 per egg to get them set but still silky. (Hint: you gotta remove them from the heat before they look done.)

Either that, or a perfect poach / over easy over low heat.  There are multiple proteins in yolk, some which set at about 143F, and others that won't set until it gets up to 150F.  To get the gravy-like texture that is perfect for eggs on toast or huevos y papas, you need to aim for 144-146F.  That takes practice on a skillet or when poaching, but it's doable.

Or you can sous vide them, but that's obsessive-level ovophilia.

/don't forget the black pepper!

Or, like, any other kind at all, but that's my lazy go-to for eggs.

Oh, yes.  Smoked fish, hollandaise, and eggs play very well together.

And I include crab cakes benedict in that category.

I've gotten pretty good at sunny side up recently. The ceramic pan definitely helps along with the lid that seals fairly tight on the pan. I'll cook three eggs and dump the on top of two slices of toast with two slices on cheddar.

The trick is to keep a clean tin can the right size with both sides cut out to use as a biscuit cutter. I like a tomato paste can. You are also going to want to butter the outside of Texas toast-sized bread before cutting out the center. A cast iron quesadilla pan is optimal, easier to get the spatula under the edge.
