Red onions are the Jeep (GP) of the onion world. They work in EVERYTHING. Stupid article all but ignored them.

Yellow onions: Everything else

Unless you're out of one, in which case use the other.

Anybody that cooks knows the difference between yellow and white onions.  I prefer to cook with yellow ones, but they're hard to find around here.  The 99 cent store usually has a bag for a buck, but my local megamart only has white and red ones.

We always have a jar of pickled red onions in the fridge. Basically just sliced red onions, vinegar and a little sugar. Salads, sandwiches, wraps, burgers can all use a bit.

Walla Walla's are the same variety as Vidalias, but slightly less sweet due to soil conditions. (Same for Texas Sweets).

I tend to use Vidalias for almost everything since I live in Georgia. But if you need good onion flavor in your sauce or gravy, you can't beat caramelized yellows.

Purdy much. Although I like to finely mince a shallot for stuff like guac or pico. But always white for beans and salsas--you need that extra bite.

Also I'll add that red is damn near mandatory for a lot of southern US dishes, both cooked and raw. Hell, my grandparents had a since of red onion, a slice of tomato, and a slice of buttered bread, with every single dinner.

Yeah, they need to rename themselves to "Guess how much this costs" because everything is over 99 cents, all at different prices, and usually no idea what that price is.

They did mention shallots, but not nearly enough.  I don't think of shallots as just onions.  I think of them as kind of onions, kind of garlic, and definitely French.

Almost. They have to be grown in one of 20 counties in SE Georgia. The ones on the other side of I-75 don't count.

Yellow:
- French onion soup
- Chinese and Indian food
- Anything sauteed or grilled
- Basic cooking stuff

White:
- Pico de gallo
- Guacamole
- Lengua o cabeza tacos

Red:
- Pickled
- Greek salads
- This one thing that I do with squid and OMG it's good
- Roasted or grilled

Green:
- Also pico de gallo but different
- Scallion oil
- Cheap ramen with eggs and sour cream
- On top of all the things
- Cut longways in stir fry

Shallot:
- Crispy-fried
- Also scallion oil
- Mignonette (sp?)
- Bearnaise
- Thai/SE Asian stuff

Squid, cut into rings and arms, blanched for a minute or two in salted water, then directly into ice water bath.

Red onion
Red bell pepper
Capers and some juice
Parsley
Lemon juice
Olive oil
S&P
Maybe some red wine vinegar if the flavors aren't working.

Seriously though, I've submitted stuff to food a few times that I thought was actually interesting or useful and they were insta-red. I basically stopped trying. But then he'll beg in the news letter for more submissions to certain tabs, including this one.

I mean, there were only three yesterday and so far only two today. So yeah...

I grow Walla Walla sweet onions, so that's what I use for everything. When they run out I have enough leeks in the garden bed to last a few more months. It'll be a while before I need to buy onions.

Oh I forgot to do leeks.

- Potato leek soup
- Quiche
- Grilled

Is that all? I thought I had more things that I do with leeks. I bet they'd make great tempura.

Also sometimes you get those big scallions at the Farmers Market and those things are magnificent on the grill.  Get 'em all scorchy and grill-marked.

On the topic of alliums, one of the best things I've ever had was a creamy garlic artichoke soup. I don't know how to make it but maybe that should be a goal for this winter.

After I posted the picture of the squid salad, I realized that in the background there's a plate of carpaccio with mandolined red onions on top.

I like to slice them extra thin and give them a few minutes to chill out in water or vinegar/salt/sugar.
