Been wanting to try some. But I'm broke and not spending money on a gallon of one of these without a taste test first.
I'm allergic to milk.

I use soymilk.

It's not a substitute for anything.  I just like it.

I'm the same way with oat milk.

I've made this Townsends recipe with oat milk  and it turns out great.

I forgot , I replace the butter with olive oil as well. Just enought to cook the mushrooms.

Meh, that wasn't especially helpful except as a jumping point to look up more.  That was more of a list of milk alternatives that exist rather than the best ones.  For example, it doesn't talk about how products just within one category (ex. cashew milk) can vary wildly in content, nutrition, and even ingredients.  Or how some of the alternatives still contain cow dairy (see Almond Breeze scandal), or are packed with extra sugar to improve flavor, or other things buyers should be aware of.

I've seen estimates that say it takes 1 gallon of water to produce 1 almond, and 28 gallons of water to produce 1 gallon of almond milk, not counting the water used to produce all of the other addins like gelatin or sugar cane.  And since California is by far the biggest producer, one of the big arguments is that their water would be better spent growing other foods.

/no idea how accurate those estimates are

This. I drink almond milk merely because its the liquid base for fruit smoothies I make in the AM; no dairy allergies here.  I had to do a double-take on the 'added sugar' part of the label when I read it, and quickly realized I've been getting sweetened vs un-sweetened (Good-n-Gather, Target brand) this entire time. Not a huge deal as most of my diet is low to no added sugar, but still a bit shocking.

One thing I noted is that no-one else in the house will touch the stuff, so my regular and chocolate 'milk' is safe from surprising me that someone put it back nearly empty. Win.

i like a coconut-almond blend just as a beverage. but i drink cow dairy too.

has anyone here ever had real raw dairy milk? i think it's kinda stupid, but an ex used to buy it at an amish market where it was legally sold as "pet food" milk, but was as pure as that stuff gets. i admit i tasted it and it was the best tasting milk i've ever ever had, and with natural cream on top.......

Never had raw milk, but pathogen risk aside, I'm sure it's awesome.

not still warm, but from that day. if it wasn't so scary i'd seek it out again for taste alone.

There's also A2 milk for people with Casein issues, as not all milk intolerances are lactose.

(If cow's milk hard cheeses affect you, but you're okay with chèvre or young manchego, then you likely have a casein issues)

... but my question isn't about 'milk' replacements, as there are a to. Of those.

What are people using as replacements for evaporated milk and condensed milk in recipes?

I'm thinking canned coconut milk for evaporated milk, but I'd be open to suggestions.  Cream of coconut is sickeningly sweet, but maybe it would work for condensed milk?

I'm using soy milk for my coffee and recipes. If you're looking for something to pour on your cereal I would suggest soy.

How about you don't actually need any milk? Unless you're an infant, of course.

\only good uses for milk are making cheese and ice cream

True.  The numbers are are lower than some other estimates make out, but the quantity appears to also vary a lot by the brand.  One guy found an interesting way to calculate it out.  He went via protein content since none of the added ingredients contribute any protein of note.

A 1 cup serving of Almond Breeze has about 1 gram of protein per their nutrition label.
Almonds are about 20% protein by weight and roughly 1 gram each (rounding here), so we're looking at about 5 almonds per cup.
16 cups in a gallon means about 40 almonds per gallon of A.B.

So a bit more than the transitive of the numbers I'd seen.  And taking the transitive of those, that puts us at either 40 gallons water per gallon of almond milk, or 0.7 gallons water per almond depending on the direction you want to take it.

That also seems to assume direct conversion of almond to protein extraction, which is probably off, with lots of extra chaff & such chucked in the process.  So probably requires even more almonds per gallon of almond milk.
