This. It's cheaper to just buy the butter. Unless you buy Kerrygold. But Kerrygold is expensive because it's worth it.

Although, to be fair, doing it this way, you get butter AND buttermilk, so.

Also, if you want buttermilk, you can make clotted cream. THAT is worth the money to make at home. No $300 stand mixer needed.

I mean, ... generally, heavy cream is kind of expensive. Just buy relatively inexpensive butter and save yourself the effort. I can get 4 sticks of butter for about ... 4 bucks.

The equivalent of heavy cream to make 2 lbs. of butter is undoubtedly more. Plus the electricity and time to make the butter.

So ... this is dumb. I mean, if you happen to need a small amount of butter but actually have heavy cream, this would be a decent substitute, but to make butter yourself regularly? Dumb.

Along these lines, if you're going to go to the trouble and expense to make butter at home, you might as well first culture the cream (add a spoonful of plain yogurt or buttermilk with active enzymes, mix, and let stand at room temperature until thick). The resulting butter (and buttermilk) will be wayyyy more tasty and worth the cost, like buying expensive euro butter. Otherwise, you're left with butter that tastes little better than store-brand butter but with more effort and cost.

/ Yes, I realize what I've described is just making homemade creme fraiche.

I've made butter before and it was a one-time thing. It was just an experiment to see how homemade butter would turn out.

Given how much heavy cream costs, it's really a one-time thing and not something that's feasible on a regular basis.

If you do use a lot of butter, it's better to buy some extra when it's on sale and store it in the freezer. That's what I do.

This is why mechanization is a good thing. I can have tasty butter by going down to the store and buying an inexpensive cube instead of spending an hour thrashing high fat milk to within an inch of its life.

It would have separated faster if they'd used the whisk until the cream started to form stiff peaks and then swapped in the beater. I've done it before with my Kitchenaid.

I know that Kalona SuperNatural doesn't contain carrageenan and other stabilizers. Your best bet is to go to a natural foods store or health food store and look around.

I'm following two recipe given to me by a very close friend who died suddenly about a month ago(he was only 43). This is one of those times I'm not interested in tips or suggestions.

Oh next one I make one I probably will search out suggestions. Just not these two. He wrote the recipes himself, and it's being made from peppers he grew. I'm not willing to change it, sentimental reasons and all. When I make another one from the jalapeños and padrons in my garden, then I'll probably poke the food tab for ideas.

KG is great - but I prefer Plugra. But mine just went from $6.95/lb to $9.95/lb overnight.

Still worth it though.

This.

I was excited to try the mason jar ice cream thing but the results left my tongue feeling like it was coated with chemicals.  I can't imagine that making butter with that crap would be very good.

Heavy Cream,
Kitchen Aid with chilled bowl and whip attatchment,
Fifteen minutes Avg.

("Whipping Cream" has additives like tartaric acid and would result in an "off" flavor.)

I make butter from cream on a semi-regular basis. I've only made cultured butter a couple of times and need to revisit that. Fresh made butter is just better; full stop. I doubt it's cheaper, but it is better.

It also gives me something to do for 20-30 minutes. Cooking and culinary activities in general, to me, is a hobby/activity that makes me feel good.
