I like spam. I used to keep a couple of cans on hand at all time especially for fried rice. It's too dang expensive now. I still have some in my canned food emergency closet tho and I'll pick some another can if it's on sale at a reasonable price.

But the most under-rated canned meat is canned corned beef. It looks gross cold out of the can, but it fries up beautifully with some potatoes and eggs sunny side up (and some fresh thyme for a Caribbean taste). It's leaner than it looks. The aroma will draw 'em in from across the house. Corned beef is a decent cut of meat shredded and salted for storage, and a staple in many cultures that were on the Atlantic triangular trade, as is salted cod.

There is an apocryphal story about an Army General who was visiting a unit during the Korean war and who noticed that the storage area for the mess tent was filled to the brim with SPAM. He asked the mess sergeant if he really served that much SPAM to the soldiers. The mess sergeant said his men really loved his SPAM so much that they requested it almost every day. The General was surprised and asked how that could be?

The mess sergeant said his recipe for SPAM with gravy was a big hit. The General wanted the recipe so he could send it to other units. The cook said he took a giant pot and put a layer of SPAM at the bottom and the poured 2 gallons of bourbon over it, then 2 gallons of scotch, and finally 3 gallons of rum and heated it for just a few minutes. The General asked if this made the SPAM taste better. The cook said, not really, but the men sure like the gravy.

Diced spam till crispy.  Almost hard. Add diced potato till crispy.  Add eggs. Eat with a loaf of 🍞

Fry up a thin slice of Spam (I buy the individual slice variety so it's easier) in a pan until it's nice and charred. Toast up a Bay's English muffin ('cause they're the best...duh!). Fry an egg and melt American cheese on it. Stack it thusly: Bottom of muffin (spread with Irish unsalted butter), spam, egg with cheese, top half of muffin (again, slathered with butter). Presto...a delicious and heart-stopping breakfast sandwich.

Folks just don't understand.

First, if you have to choose between Spam and Treet, eat the Spam and give Treet to someone you hate.
Second, canned corned beef is stunning, but you really need to get a good brand. Otherwise, you're gonna spend real time picking out the connective tissue and blood vessel bits... Oxbow pissed me off.

Yeah, it's still on shelves, but it ain't the same stuff I used to get even just a few years ago. All the Underwood products nose-dived in terms of quality. Their chicken spread used to be palatable - I wouldn't give it to my cats now. Their deviled ham spread has so much fat in it that you have to drain the can before you can use what's left.

Spam, shredded hash browns, cheese (preferably pepper jack), and eggs. Serve with toast, hot sauce, and coffee.

Makes a nice breakfast for 4-6 days (one person).

and i've found that deviled ham is way better when they folks who make it up their game and call it pate

'Corned' beef is specifically preserved by packing on salt.

So you might be making a beef hash, but it's not a *corned* beef hash if it's with fresh beef.

As much as I like cooking, I've never got into major food curing.  Pickled pork (and then freezing it) is about as far as I go.

Yup.  It's the couple of tins of meat  product in the pantry that you know isn't going to go off in a power outage.  It doesn't need defrosted.  It's just there, waiting for you.

I've been in situations where... hey, the power's been out for 5 days now, most of the meat is spoiled.... but I still have that spam in the back, waiting.  And I've been poor enough that it was the only meat product I could afford.

If you fry it up right, you can get rid of most of the fat, and it's actually quite tasty.  From there, you've got options, from pasta to fried rice to sandwich meat... or just served with fried spuds.

It isn't fancy, it's salty, its fatty... but it is there.  And it beats the fark out of a butter sandwich.
