The article never really defines what "frankenfoods" are, nor does it explain why they would make you crave more, other than to explain that they are "scientifically designed" to trigger cravings.
I'm not saying they're wrong, they just didn't explain why.

I gotta say it's pretty simple to understand that if everytime you wanted a donut you had to start by grinding your flour and capturing yeast you'd eat a lot fewer donuts. Ditto everything that's "bad" for you.

It wasn't until after I got diabetes that I discovered how, when I buy my food raw and cook it myself, it's more satisfying and I stay sated for longer.

I can give one example: interesterified fats. Naturally occurring fats and oils are combinations of three fatty acid chains in one molecule. Interesterification breaks them apart and shuffles them around and creates fats that don't occur in nature. Lots of them are used to comply with regulations about saturated fats, others are probably created with physical properties in mind. On ingredient labels they appear as "modified [something] oil".

I don't worry about them much because after the human digestive system disassembles those frankenmolecules it's as if we'd eaten the unmodified oil. But they're definitely frankeningredients.

Remember when "Frankenfoods" were foods that incorporated GMO ingredients?

Yeah.

That particular hobgoblin isn't scary enough any more, so the scary word has shifted to a different hobgoblin. In this case, the hobgoblin is "foods designed to appeal to your evolutionary cravings for things that aren't naturally plentiful."

You must be a billionaire, because the average person can't afford to do that.  Most of the 8 billion people living in the world today can only afford fast food value meals, and nothing else.  They cry while they eat it because they'd rather be eating something healthy, but they know it's forever out of their reach.

This is a timely article.  Once a year, we have a neighborhood gathering centered around apple picking and cider making.  A food-scientist friend of our neighbor always comes to town and it's the one time every year that "frankenfoods" is a topic of conversation.  There are always questions about his latest creations, frequently, there are samples.  The festivities begin in a few hours.

The correct usage of salt, fat, and mouth feel, and smell can be like crack. And, that's with just regular cooking.  It has to be wrose when you have scientist doing it. We really should outlaw food science.

After I found out, I discovered everything has suger. Like everything.  And, no sugar cost more. Jfc. I found an amazing ketchup that was mashed veggies.  No sugar.  (Added) but the farking thing was 6 bucks. I'm sure it's now 15?

Frankenfoods. Lol. If we stopped using fat, salt and sugar, you'd be complaining that the food tasted terrible and we were doing a bad job.

You can't have it both ways.

B.s. I can cook damn good. That isn't what you are doing.  A good meal makes you content. Macdonalds doesn't.  End of the farking story.

First, I think that website gave my computer HPV.  Second, please stop using the term "ultra-processed".  It's a garbage word, that doesn't actually mean anything.  Third, I do applaud them for pointing out that if you cooked those foods from scratch, you'd be FAR better off.

My soapbox is that if people just eat real  food, cooked from scratch, it'll fix a host of issues.  Physical problems, mental health problems, you name it.  But don't try to push that with terrible terms like ultra-processed, it just makes you look childish.

Though your comment does say a lot about the people who buy the food you "science", it says more about you and those in your profession.  You seem to be fully aware that, without overloading food with fat, sugar, and salt, there's no amount of science that can take garbage ingredients and make them palatable.
