The curds are one of the things I like about cottage cheese, preferably large curd.

She's right. There's nothing magical about ricotta other than having an Italian name and being a method of getting the last bit of cheese out of leftover whey. If you blend cottage cheese it is pretty much the same thing.

So it's bland as shiat. My dad had to have cottage cheese at every meal.

It's not my favorite thing. But it's about as inoffensive as it gets without going potato

CSB: When I was in grad school, all of us in the same lab would go out to dinners together sometimes. We got a new student and the first place we went to was an Indian restaurant. She was all worried because she hated spicy food but we assured her there were plenty of non-spicy Indian dishes. So we get there and she tells the server she wants the mildest dish possible. The server suggests a paneer dish, can't remember exactly which, but she orders that and then requests that it be made extra mild. The server gives her a confused look and says, "It is cheese served in plain yogurt. It cannot get any more mild than that."

Please be precise. I have made both many, many times.

Indeed. That is the only substantial difference difference.

My mom always used dry cottage cheese (mixed with egg and spinach) as a layer in lasagna because ricotta was hard to find and expensive when I was a kid.

The lactose free cottage cheese I buy is more like ricotta than cottage cheese anyway and half the price.

I recently started eating coronation grapes in cottage cheese and thought to myself "this is some bougie shiat, basically ricotta and wine grapes."

All cottage cheeses are not equal. The gold standard for me is Darigold brand, large curd, 4%. Any other brand or configuration is gross or tastes "off" in some way or another. Texture is a big part of it. But I would try it whipped, as a veggie or chip dip.

Which lactose free one? Lactaid?
