Apple sauce, apple butter, cider, pie filling.  We moved in Jan. 2020 and started the orchard from scratch, so It will be a couple years before we see much volume.

I freeze them and do apple desserts when I'm in the mood. Apple Crisp, Apple Betty, Apple Fritters, Apple Cobbler, you get the picture, things get pretty Forest Gumpy.

If you're lucky enough to have a cold room , you can store the apples for months.  Wrap each one in newspaper and store in a cardboard box.

I've got a few apple trees around here and a lot of them of them are so knobbly that they look like Pete Puma's head.

Does freezing them do anything to the texture if you just want to eat them as regular apples, or are they only good for cooking?

it's super easy to make. it won't look like you have enough batter to apple ratio when you mix it, don't worry. you can add more spice with pie spice or ground cardamon if you like, use pecans for the nuts. it's done when a toothpick comes out clean but moist and is a moist finished product. excellent served as coffee cake or with vanilla ice cream as a warm dessert.

Uncooked, but premixed, apple pie filling in pint containers. Thaw more than one for a pie, but one covers strudel, or vol au vent for breakfast, if you have guests.
Or ice cream topping.

Save on gas in your old age.

It's something like 1000:1 odds that an apple tree grown from a seed doesn't produce an apple you immediately want to spit out when biting into it. Apples require cross pollination, and all the orchards I've been to had rows of trees book ended by crab apple trees.

The phrase "gone and done picked" is annoying me more than it should. It's not particularly poetic to my Northern ears, all it does is waste time with syllables that don't add anything meaningful.

But anyway I'll basically just buy enough to make a pie with plus a few left over to munch on and put in my week's bag lunches. I love this time of year, every week there's a different variety I love at the farmer's markets. Macoun and Winter Banana and Golden Russet are coming up very soon.

Winter Bananas are wonderful in pies... Golden Russet are so intensely flavored it almost hurts when you eat them, but in small doses I choke a few down

Ice cream topping. Sliced peeled apples, brown sugar, butter (or bacon fat if you're evil), calvados, pinch of cinnamon, pinch of salt, dash of lemon juice. Basically caramel calvados apples. Yavelcome.

CSB:  a good friend of ours is from the city and overheard some of us talking about driving the back roads around here to pick apples from some of the abandoned homesteads.  We found some very tasty old varieties that way, but jokingly referred to them as "road apples".  Said friend was unfamiliar with the common use of the term.

Fast forward a few years and he is teaching HS in a tiny (<800) logging town.  Fall rolls around, and he's chatting with his students about going out and collecting "road apples" with his wife.  He goes on and on about all the things they make:  pies, apple sauce, etc.  It wasn't until spring, at a school assembly, that he learned what road apples are...when a graduating senior "willed" him his family's collection of road apple recipes.  A fellow teacher, with a rural background, had to explain to him why there was such a reaction from the crowd.

My six-year old grandson loved the grilled cheddar cheese apple bacon sandwich I made him last night for dinner.

Lots of apple cinnamon oatmeal.

Microwave apple crumble in a mug has been a big hit, too. (Also sprinkled with crispy bacon).

So far I have made apple butter, and am currently making apple cider.  I wish I had the time to do apple pies.
