Breadfruit?

I can honestly say nothing. Out something called "breadfruit" and describing it as "can sub in for potatos" makes me particularly excited to try it.

Most of the breadfruit recipes I see feature three phrases:

"Roast"

"Fry"

Here in the Caribbean we eat loads and loads of it. One tree can produce a couple tons of carbs, twice a year. Lighter and fluffier than potatoes. As long as the flesh is firm, just peel and core. Use as potatoes for roasting or frying. Mashed has a bit of a strange texture, more like oatmeal than mashed potatoes.

They are selling snacks made from it , like potato crisps / chips and crackers here in the US at higher level and healthy grocery markets. I have been meaning to try a couple. I am interested in find out what I could do with flour.
