So myself and 3 others used to do BBQ competitions.  We were amateurs and only did 2-3 a year, but one of those was this really big one for pros.  We got tired of sleeping in a tent on the ground every year so we borrowed an RV and brought it to sleep in (no hookups, no electricity or water ... we just slept there).  Since it was an RV, they put us on the "pro" area rather than the amateur.  Middle of the night - knock on our door.  Somebody had sabotaged another spot - taken all their meat out and thrown it in a nearby dumpster.  Supposedly, >$500 worth of meat.  Of course, they blamed the amateur bumpkins.  Never did find out who did it.

Are you sure they didn't?  The article is light on details, but they're claiming a loss of "thousands" for 20 briskets.

At grocery store it's going from 2.99 to 3.99 a pound. Raw. Untrimmed. Vacuum packed.
Other styles are 5 a pound and up.
Smoked and Vacuumed is 13 to 20 a pound.
And those are grocery stores

I got a really big good one for $54. It was about 13-14lbs. Chicago have some good bulk meat packing places. 40lbs of medium wings in bulk is now under $70.

$6/lb. (USDA prime) x 20 lb.s/brisket = $120 cost
$120 x 4 (resturant markup factor) = $480 retail value/brisket
20 stolen briskets x $480 = $9600 loss

I got a cheap home smoker, and even with that, smoked BBQ brisket is now my favorite cut of meat.  Also, I can cook it so it has some "chew," which I prefer to the completely mushy texture that most restaurants serve.

Of all restaurant profit margins, beef's the smallest. Steakhouses can't afford a bunch of people sending back their steaks. Losing a bunch of pasta? Who cares. But a bunch of steaks? Yeah, that sucks.

For the BBQ restaurant my husband works at, that many briskets would cost the restaurant between $1000-1200. Therefore the article is using their retail value rather than their purchase price.

Basically, police report and insurance claim math.

Illinois and Texas... but I also miss the music in Austin. But either place it's food first.
