Of all the places I traveled in Europe, Germany is right near the bottom in terms of decent vegetarian or vegan fare. Nobody wants boring ass-spaetzl at every meal (note, the only place worse was Poland...fark Pierogis.)

Just a very old-fashioned food culture that traditionally didn't depend on a lot of fruits and vegetables. Even the cheese is boring.

Glad to see Germans moving away from animal flesh consumption, but what kind of food are they choosing instead? Cos it certainly isn't German...

Many years ago, a young woman had a faith retreat proposed starting a movement to flip federally subsidies so that meat was TAXED and vegetarian proteins received subsidies. I can't digest meat, but I was in a near panic to oppose the idea. I envisioned my wealthy in-laws throwing ostentatious meat parties. I also foresaw guys I knew back home rocking, tipping over semi food delivery trucks and shooting forest rangers in the head in the woods. But the pandemic hit and a surprising number of people tried meat substitutes without rioting. I've concluded that young woman was right and I was wrong. I wish that I could go back in time and support her idea. Fifteen or so years of federal taxes on meat with federal subsidies on meat substitutes might have had a positive cumulative effect. Of course, they still could.

Um, you may want to wander away from the touristy bits of Germany.  Sure, you still hit the cliche old German meat centric fare in places like Sachsenhausen in Frankfurt (the historic district), but the food in the country is as varied and bonkers as anywhere.

It makes sense to me.  When I eat German bratwurst I serve it with plenty of potatoes, sauerkraut, and onion.  Those are vegetables.  American bratwurst I also serve with sauerkraut and onions, but no potatoes and I always eat those on a bun.  Vegetables have a place alongside sausage.

I did a summer internship outside Potsdam.  The cafeteria food was so bland.  Every dish was more or less a plain piece of unseasoned meat.

(My next internship was in Crete ... now that was good cafeteria food.)

I just baked a weeks worth of rolls and veggie-burgers for maybe ten bucks.  I like scienceing in the kitchen, so this time I added sauteed garlic, onion, zucchini, and beets.  TVP, gluten flour, whole wheat couscous, rice, beans, spices, ketchup, mustard, worcesterchestershire and soy sauce, flax.  You just have to bake, flip bake and then pan fry, top with burger toppings.  Probieren Sie es aus, meine deutschen Freunde

There are meat-based meat coming up. They take stem cells from cattle, and then grow the meat in a lab. It's literally meat, but just not butchered from a living animal. It grows the muscles and fat just like it would on a living being, but done in a lab with nutrients supplied to it.

At the moment, the cost is rather high, but I can see this being extremely cheap and highly efficient in due time. Eliminate or greatly reduce the use of water, land, expulsion of methane (cattle farts), transportation, intermediate steps from farm to table: butchering, cleaning the carcass, etc.

And, it can have specialty curated type meats. You want kobe beef? No problem. You want Eastern Peruvian mountain goat? Heck, it could even be possible to take cells (not stem cells, of course) of extinct animals that may still have DNA frozen in tundra, and have prehistoric mammoth meat.

Not everyone -can- go vegetarian.

Css:  some people are born not able to process oxalate well, which is found in a lot of vegetarian fare. And that means developing huge kidney stones that may bilaterally block your kidneys, resulting in serious health issues, ICU stays and more fun. I found this out when I went vegetarian. Took 6 months to end up in the hospital. I was eating the right things...body just couldn't filter out the oxalate...no matter how much water I drink.

Which foods are oxalate rich? Spinach, nuts, cooked tomatoes, quinoa, brown rice, potatoes, celery, anything-germ (wheat, corn, etc.), beans... the only foods I KNOW are low oxalate without checking my ring of cards? Meat and dairy.

So, yeah. I love that we are going to a more plant-based diet. I just wanted to provide a friendly reminder that some people aren't choosing animal protein for giggles.

Living in Leipzig, I do see more vegan/vegetarian options than I ever have before but there is also a growing grill/smoking meat culture. Coming from Texass, I had to learn to do the smoking thing myself. I ordered a nice rack of Amerikanische spareribs from an online retailer and they were awesome. The Germans know how to do pork but get their cuts ass backwards sometimes. What they call spareribs are usually baby backs. Food culture is improving in Germany slowly but surely but stithas a ways to go.
