'People' is the plural version of 'Person' 99% of the time. The alternative plural 'Persons' exists but is only used in technical language: Maximum 12 persons (in a lift/elevator). There is another noun, singular 'People' and plural 'Peoples', which means nation/tribe.

We discussed the issue in a linguistics class once, and it turns out that there is a lot of ambiguity over the rules regarding -'s or -s'. For example, according to one interpretation of "the rules", turning a person's name which happens to end in an "s" sound, such as Thomas or James, into a possessive, shouldn't have an effect on pronunciation. "Thomas" should sound the same as "Thomas' ". However, common usage favors adding an "s" sound to the end of possessive names, as in "Thomas' English Muffins", pronounced "Thomas-es English Muffins".

I think a debate could be had on whether "The People's Convoy" or "The Peoples' Convoy" is proper usage, because adding "The" to "People" turns the plural "people" into the singular "People". By omitting the "The", the people who named the People's Convoy introduced ambiguity.

Plus, they are a bunch of idiots who think stopping traffic while sitting in air-conditioned comfort behind the wheel of a carbon dioxide spewing truck is a valid form of protest.
