hrm, almost half of those are roll/salad style (good!) - but most of the rest seem too heavy and cloying, waste of delicate lobster.

and no thermidor? no bisque??? no Cantonese style ginger scallion, where it's been cleanly hacked to pieces and no tools required to eat it?

This.  Also, list fails without whiskey creamed lobster vol-au-vent.

Yep, that shiat is deelish. The wife cooks it at home - buy the lobster at the Chinese supermarket and ask the dude to chop/clean it. Wifey does the rest in the wok. Yum!

We had lobster rolls for the Fourth. I've developed an aversion to the massive amounts of tarragon I used to love on these, so it was nice to do them a little differently.
Lobster is always a treat and it made up for the lack of fireworks shows, lake trip, or parades this year. This might be our new tradition.

My favorite (other than steamed and served with butter) is stuffed baked lobster. YMMV, but I love it!

man, the first time I had it was some roadside cheesy "Hunan Palace" or whatever up near Yarmouth/Dennisport maybe? and we had too many tiki drinks before it was even time to order, so... "rawr! lobster, please!"

poor waiter was all, "sirs, that's fine, which style would you like?"

and we had no clue or even how it was prepared. "um, that ginger scallion one sounds good, two of those please?"

farking. unbelievable. the way it is cut (cleaved? cloven?) so cleanly, no shell fragments, no smushing/crushing or any deformation. every piece perfectly exposed so that even chopsticks can easily pull the meat out at once. literally anyone who likes lobster needs to go try this, regardless of which marinade/sauce you pick.

wish I'd known to look for that when I lived in HK! aside from eating mostly street/cafe food, when we did go to fancy places the lobster was only served whole, because 'Murica or something.

Scrambled eggs with diced lobster and prime rib and potatoes is a really great breakfast. Or brunch. Or snack. Or even a dinner . Now if I could get a burrito sized corn tortilla to hold together everything ,with black beans that have marinated in a salsa for 3 days , well, also a burrito.

I prefer Alaskan King Crab anyway.  But the price is ridiculous now.  I used to live within walking distance of a Wegman's, and they would have fresh, never frozen king crab once a year.  10 years ago it was $50/lb and I can't even imagine what it would cost now.

Anyway, my dad had a restaurant, and a few times a year he would bring the biggest, most succulent lobster tails home.  Just steamed with drawn butter.  Best lobster I ever had.  I've tried to recreate it, but I always come up short.  Maybe it's just nostalgia.

Oh, and contrary to what everyone thinks, big lobsters are just fine.  For my 35th birthday I got a live 7 pounder and it was marvelous.  I had to take the claws out back and hit them with a ball peen hammer on cement to crack them, but it was well worth the effort.

While the price tag might be a bit steep

If by "a bit" you mean the most pricey around unless you own a labstah boat, or know someone who does, then yes, I agree. Far better values out there to me, and I consider labstah a regional thing in general anyway.
Let's just say I treat dungeness crab during the season the same as this person treats labstah.

The cold avocado soup thing sounds good... you always need cold soup for summer (was 104 here a few weels ago)

Our local fishmonger store (Coastal Seafoods in St Paul and Minneapolis) won't even carry King Crab because it would be cost prohibitive to sell it. Canned crab (refrigerated) lump meat sells for $40-50 or more a pound, so for crab cakes, I've switched to claw meat which is still "only" $30 a pound. Yikes!

Made cold water lobster tails for MrsGriffin's birthday 2 nights ago. 4 ounces each and only $9.99.

Even snow crab is insanely expensive. Anyone know why crab as skyrocketed while lobster and shrimp have not...cause wild-caught 26-30 Gulf white shrimp are the same price per lb as 4 years ago. Weird.

If you're craving crab cakes and don't want to go crazy on the price, you could try lump crab in the can, which is sold by the Starkist Tuna packs. It's actually not too bad and is about $4 for a 7oz can. If I'm having guest and/or wanting to impress, I'll spring for the good fresh stuff at the seafood counter.

Okay, wait, what?  I've not bought canned crab, but why would claw meat be cheaper?

The claw meat on a Dungeness crab is the best part.  And there is less of it.  What am I missing?

Bisque is the only other acceptable answer to "Grilled, butter'd".

Had a four pounder for college graduation and it was awesome. Added bonus: theres enough shell to make a small batch of bisque with!

That sounds righteous. Wrap that shirt up in a burrito, deep fry it, then put it into a taco pizza. Fold, then add some more sauce and nacho cheese dip with jalapeños. I hear that there's a complimentary canvas carrying bag to take it home in.

hunh, TIL!
https://www.southernliving.com/food/seafood/crab/lump-crab

I did already know that canned is usually pasteurized which will kill some flavor.

but not about "lump" crabmeat - so, the best one is jumbo which comes from the two swim-fin muscles?

"Jumbo lump," prized for its delicate nature, sweet taste, and satisfying size, comes from the two muscles of a crab's swimming fins and is the perfect size for chilled seafood cocktails and crab salads. "Lump" meat is made of slightly smaller white pieces and is good for pasta dishes, crab pies, and crab cakes. "Backfin" indicates a mix of broken lump and small pieces of meat from the body of the crab; use it in stuffings, dips, or soups. "Special" grade meat comes from the crab's body and is usually the sweetest. Dark brown claw meat comes from the legs and claws; it has a stronger flavor and is ideal for sauces and dips.

here in Phila, you can generally get only 2 forms of crabcake: lump, and deviled. deviled is plenty tasty (modulo shell fragments lol) but likely from some dogfood grade of mechanically-separated. "lump" here is usually quite disappointing, esp. given the stupid pricing.
