I trim the stalks because I prefer only florets, not necessarily to save money.

I prefer the stalks to the florets...just trim off the outer layer of tough fiber, cut them into strips, and steam with teh florets.  Let the kids eat the "little trees" while I munch on the trunk!

I prefer the branches.  I toss both the florets and the stalks / trunks.

yeah well respond ot the obvious market demand.
trim the stalks off yourselves and then change more by the unit of weight for what's left.

selling, by weight, what you know most do not want is shiesty compared to just charging what you have to to sell them exactly what they want.

At least that is 100% open price honest, instead of claiming to charge X by weight BUT a large portion of that weight will be thrown out and you clearly know it.

When they see what is obviously sketchy bs, and they avoid the sketchy bs, that's just rational behavior on their part.

The pictures in the article were way more stalk than floret.  The grocer was being dishonest, and is mad he/she wasn't getting away with it.

My grocery store charges by unit, not be weight. All stem, all floret, it would be the same charge.
