The tricky thing here is we're dealing with regional things; bologna is a really large sausage that comes in a really large casing from Bologna. And mortadella is an emulsified large format salami from Northern Italy.

Otherwise, it's just sparkling meat.

Hebrew National kosher hot dogs are a whole different thing. Their 8oz kosher dogs are girthy enough to make a lot of guys regret ordering them in front of their girlfriends. And they're frippin' amazing. They answer to a higher power.

I mean sure theoretically you could have the same spices and same meat cuts and they are both emulsified but the size does matter in this case.  Thicker food cooks differently than a thinner food.  Also you would have to find a giant bun to eat a whole bologna out of, might take a special oven and everything.

2022-06-28 3:47:07 PM
Essentially yes you could have the meat, casing, and spice bill be the same and you'd just have a big hot dog; but hot dogs are better. Because you can fit that whole juicy meat log in your mouth and snap the natural case with each bite swallowing down every inch.

They're both encased meats and when you eat a hot dog you're encasing it so you become the hot dog.

Since I found out I am gluten sensitive and given that corn tortillas fall apart easily, I am considering using bologna as a taco wrapper.

unless you farkers have better suggestions.

Wrong.  They CAN be.  They aren't automatically. Someone who makes both may spice them differently... or may not.

Warm the corn tortilla with a little bit of cheese like an open-face quesadilla. Then fill and fold.

I disagree.  They're dense and dry as hell and chewy and don't have quite the right German mouthfeel of a frankfurter.  A proper weenie has a bologna mouthfeel.

Whether they are or aren't is less important than whether or not you fry this sucker..  Because boiled hot dogs AND bologna directly off the loaf BOTH suck.  Fry them in a pan? They're great.

I found some mozzerella wraps in the cheese section. They do pretty well in place of bread for a sandwich. Should work for a taco, just layer the lettuce at the bottom as a heat shield.

Nope. I want that texture. I want all that flavor. Then again, I'm not a huge fan of bologna. Even given a hard pan sear, the texture is what sets me against it. Which is perhaps why I prefer brats to dogs in the first place.
