You'll want to eat it hot, so try to get invited when someone butchers a sheep.  Otherwise the fat congeals and it's kinda... chąą'.

To become Miss Navajo you have to show how well you can butcher a sheep.  Being able to wrap good ach'íí is on the list of traditional skills, but I dunno if it's required.

I've eaten pretty much every organ. I won't eat brains because of the risk of prions and the resulting diseases. Intestines are too rubbery and they have a smell that lingers even if you wash them thoroughly. Spleens smell like an abbatoir after they're cooked.

As to favorite organ meat, I do like chicken hearts, gizzards, and liver. Beef tongue, heart, and tripe are good. Fish eggs. Kidneys are fine. Sweetbreads are more for the texture than flavor.

Deep fried smoked cow lungs. They're crispy and really tasty.

I'm pretty sure you just described everything that is deep fried.
I have almost every kitchen gadget there is, and the one thing I won't allow in my house? A deep fryer...

hmmmm, most people who do this say it tastes like badly prepared beef liver?

and most seem to believe it has health and immune benefits.

and NOT overcooked calf liver isn't half bad.....

what say you, farkers? anyone tasted human placenta so far?
