It's possibly the opposite. Maybe they found that showing a dog a certain kanji, written on steak, made them friendly

Write the kanji character for oni (demon) on the palm of your hand. If a dog sees you, show it your palm, and the kanji will prevent the dog from barking.

That's pretty much it. With magic, there is always a way you did it wrong, or displeased the spirits, or their magic was stronger, or you didn't truly need it, or basically anything. Magic is fickle, unlike science.
