Grilled a filet mignon last night. (Sous-vide first). Probably shrimp kebabs tonight. Maybe it's because I shop at Whole Foods and Trader Joe's, but I honestly haven't noticed meat prices being that high. Milk and cream, yes. Meat, no. Though they were selling Copper River salmon for an eye-watering $44/lb yesterday!

Having friends over tonight for burgers and hot dogs, going to a party tomorrow where we'll be served burgers and hot dogs, haven't decided yet what we're having Monday but it will probably be meatless because we've been doing meatless Mondays for a few years more for health than expense.

pork tenderloin and lamb burgers.
the tenderloin has been been in the freezer, bought on sale a little while back, and the lamb is home grown.
I'm not doing a leg, because I like it on Abrahamic occasions, not for religious purposes, but for the ancient symbolism that transcends religion, yet is the purpose for the act; That connection to what it is be be human and need to survive. That's kind of the point of these rituals that revolve around food, especially grilled meat.

This is the most expensive thing I've put in my mixer. Hamburger night ain't what it used to be when you're thinking of the grocery bill the whole time you eat.

Grilled burgers yesterday. Grilled chicken sandwiches today. And maybe another burger Sunday. Too hot to grill on Monday. Other than heat for a couple of days, looks like a great weekend. Bike ride in about an hour.

Monday: spicy bratwurst & corn on the cob

The brats were five bucks a pound but I love those firecrackers. 80/20 ground beef was two bucks a pound, good enough for taco meat.

We ARE having pizza tonight (as it's leftover from a couple of pies I made mid-week) but tomorrow is for pork tenderloin on the grill.  I am a big fan of grilling holidays, hope everyone has a great weekend!

Ha, totally getting a kick.  I got an Ooni pizza oven for my birthday, and we're having 17 people over for a "throw your own pizza" party.  Actually I'll be doing all the throwing because high temperatures etc.

Now I have to go to the store to buy some canned pineapple.

Before the SO left for his Dad's memorial service. I asked him to put the dough in the bread machine in the 'fridge.
He did, uncovered, so now it has a nice layer of crust on it. I'll see what's salvageable...but I was trying to avoid a store trip for just buns.

Lamb. I was in Iceland before the plague and got hooked on their hotdogs which are mostly lamb. You could get them shipped to the states but they cost $15 for five plus overnight shipping. Then I found a small company that sold them for $5.50 for 5. Going to make lamb burgers with domestic lamb too.

We currently have three pizza ovens on the deck as my husband has been tasked with reviewing ovens and some good sauce and dough mix.
The Ooni is the beautiful one. I love the color and form.

Yesterday I did a spatchcock chicken under a brick as per a recipe linked here on Fark.  For the brick I used a heavy ceramic pan that I wrapped in foil that I used a bit later as a diffuser.

It worked out pretty well.  I had it sit in the fridge a day with salt, pepper, lemon juice and some other spices, and after half an hour I started basting it with the Portuguese Buffalo sauce I've been tweaking.  I was happy to grill something different from the usual three things.

I made pizza with morel mushrooms and garlic last night and I have 2 more pieces of dough for tonight. I think I'll use the grill today, cause the oven didn't get hot enough last night.

Chicken leg quarters. Found good prices on bags of them at Aldi's. Probably 7 or 8 good sized for less than $6. Teriyaki marinade or a good rub. Baked taters and corn in cob. Others can bring sides if they want, but this meets the need and lets me focus on fun more than cooking.

/Having some of the cooler *cough cough* work team members over for a low key hang since we all work from home.

Would you be offended if someone asked you why you haven't eaten meat in 30 years? I understand that some people think it's intrusive to ask that question.
There are interesting studies coming out about how a vegetarian diet can relieve inflammation. That's the only thing that has made me seriously consider swearing off meat.

The SO likes his burger very thin. So, I've taken to doing a makeshift burger press with two sheets of wax paper...and pressing it thin with a cold cast iron skillet. Then just stack with the wax paper between each patty.
I can make a big batch and freeze them just with the wax paper between each patty and then after I get my meat all hard.
I can vac pack it in groups for long term storage in the freezer.


I also use this..."Dales Steak Sauce".  (It's a mix of Soy Sauce, Tamarind, Garlic/onion powder, corn sugar, and 'spices' (lemon juice and orange peel, too I think).

I am hoping there are blackberries hiding in my freezer to throw into a barbecue type sauce for a marinade. Marinade whatever broil/roast/steak sort of thing the spouse wants to make, open some beers and try to pretend it isn't humid as all heck. Beyond that, "not traveling" is all I have in terms of weekend plans.

(It's the marching band flashbacks that get me)

Yes.

And my great grandmother (born in Sicily) used cream in hers, which I can't eat.  But it used to be the meal that I always requested for my birthday.

But I can't stomach cow's milk anymore, so I haven't had it in more than a decade.  The egg only recipes are okay, but it's like trying to give someone lasagne with fresh spinach noodles, béchamel, and bolognese when they're expecting the American style lasagne.

Okay, maybe not that significant.  Maybe more like asking for a Pepsi and all they have is Coke.

The friend that I'm visiting said that I should try to make it this weekend, so I can try to dial it in before my birthday.  So I'm going to try canned coconut milk.

And we use bacon, because that's what was available when my great grandmother made it, not pancetta or guancale.  Although she did have pecorino, which luckily tends to be okay for me to use.

And I've had lots of variations through the years that are fine...crushed red pepper instead of black, with onions, whole eggs, yolks only, with peas, different types of pasta (we used fettuccine), etc.

Never garlic, though.  I didn't even know that was a thing until I saw some internet rant about it.

Not offended at all. I originally stopped eating meat because I lived with a woman who was vegetarian and it just sort of happened naturally. First I stopped eating meat "off the bone" but would still eat burgers and hot dogs, then gradually those faded out, too.

I still remember the last time I ate meat, it was a chicken fajita. Chicken was the last meat I was still willing to eat, and that day I bit into a tough, rubbery chunk of sinewy nastiness. I put down the rest of the fajita and said to my (different) girlfriend "That's the last time I'm eating meat." That was in 1991 and I've never eaten any since.

But to be clear, although I AM a Prius-driving vegetarian, I'm not really one of those weirdos who cares what everyone else eats or drives. I just recognize the stereotype. And it DID help with my gastro/reflux, and with losing some unnecessary weight, so there's that.

I was wondering if it is possible or if fish is too flimsy.

Thanks for sharing that. It's a lifestyle I can completely understand intellectually and I wonder if it would make me feel better. I think I lack the discipline it would take, but I admire people like you who have it.
I do like my car, though, and will stick with that for a few more years 🙂
