Polenta taragna is just cheese grits.

Moeche sound quite similar to pea/oyster crabs, over which I have been drooling for some time now!

Some of those look gross.

A TV personality who cooks more than just lasagne and cacio e pepe is Lidia Bastianich. Unlike most of the people in the U.S. telling us how to cook Italian food, she's actually Italian. Came over here when she was 12 or something like that. She'll usually bust out at least one little-known dish on her show.

The Italians eat a lot of fruit. Not that all the stuff she cooks is low-calorie, a lot of it isn't.

I season all of my food with cruelty. It's basically just salt, but it's distilled from orphans' tears.

One of out brew pubs does a thing called Bagna Calda. "Whole garlic cloves roasted with butter & olive oil. Served in a hot cast iron with toasted baguette."

OMG the whole place smells like garlic heaven when one of those comes out of the kitchen.  Just a pan of garlic in boiling oil.  Rawr.

It looks like this Italian thing, zampone, involves mixing pork mince with spices and lentils, and stuffing it into the piggie's shin skin.

I have a recipe for pig trotter & pork shoulder posole has been on my to-cook list for a very long time.  One of these days I'll get around to it.  You might've just gotten me in the mood to make it.

The real thing includes anchovies and butter. As Dr. Franklin says: "I can feel my arteries hardening from here." I am not normally a big anchovy fan, but I have had a version without them and it was... lacking. Good, but, lacking.

Yeah, I'm looking at them as separate dishes.

One is garlic confit, and the other is a garlic-anchovy spread.

Yes, but add extra parm into your polenta, pour into a shallow baking dish, and let chill until solidified. Remove, cut into wedges, and pan fry in a little B/EVOO and the cheese will brown crisp up while the interior remains soft. Pour on some heavy beef ragu and you're in heaven.

My family were hog farmers. Everything but the oink! Although I think in the era of prion disease, brains are taboo. My maternal grandfather's favorite breakfast was pig brains scrambled into his eggs.

I don't think pigs have any human-communicable prions.

I called our Brain Heart Infusion Agar supplier a while back and they assured me that it's only made with pig brains.  Sooooo I guess I'm good if I breathe in some of the powder.

I've never had bagna calda, but bagna cauda is amazing. There is a recipe out there from Cook's Country for bagna cauda roasted potatoes and it is amazing. My mother thinks that she hates anchovies, but she loves these potatoes... I didn't tell her the truth before or after. She's better off ignorant on this issue.

hee hee hee, yeah every time I've made aglio e olio I make sure to melt in a few anchovies. no one has a clue, but they would totally notice if it wasn't there.

what gives me a sad is that, even in the before-times, few restaurants would use anchovy in caesar salad.

I've had a pork brains a few times.  Best time was in Shanghai mixed into Ma Po Tofu.   The brains had pretty much the same texture as the tofu!
