Option #1, an actual freeze dryer is crazy expensive.
The other options are not freeze drying.

Yep, that's the problem. We do a lot of canning and dehydrating of our vegetables. I looked into freeze drying.  To get one that will do a decent volume was $3000+.   That and you can only do one batch in 24 hours. So it's not a reasonable amount of time.

That's true!  It's almost as expensive as some other hobbies, like drinking.  The one we ordered is about 3K. That's, what, a couple months' bar bill?

If you fill your freeze-drier up every day, you'll end up with vast amounts of freeze-dried food.  That's not a plausible objection, because you can freeze-dry a lot more food in a day than you could eat in that day..

That it's a device only the reasonably wealthy can afford is a real objection.  But if you can afford it, and you have huge gardens, like we do, it makes a lot of sense.  We can and dehydrate a bunch of stuff already, but nutrients are better preserved by freeze-drying, so it makes sense from a health viewpoint as well.

I guess it's just another way poor people get screwed.

I actually looked into it a couple of years back.  To make FODMAP friendly camping food.

I don't know if it was because I caught them during a sale, or because their prices have gone up during the pandemic, but the entry models were under $2k a couple years ago.  It's $2600 these days:

I couldn't justify it on my own, but my mom was having issues after surgery and not being able to do lift heavy things for canning (my step father has a HUGE garden), so I was trying to figure out if she wanted to go in on it.

There was a company that freeze-dried food in the town where I grew up.  Mostly for hunters and campers, but there was a rumor that they had NASA contracts, too.  They did beef jerky, too, which was a big seller, but they had vegetables and stuff like freeze-dried ice cream, too.
