Usually I fry spinach in olive oil, maybe with garlic and ham/seafood, before adding raw eggs to scramble.

I usually just squeeze the can in my bare hand until it pops, and then catch all the spinach in my mouth. I've gotten so good at it that I don't even have to take the pipe out of my mouth.

I've tried and tried to like spinach but I've accepted I'm not a fan.
except with ricotta, packed into delicious carbs in some way.

Blend it with ricotta and it makes a nice layer in your lasagna.

I doubt that. Put it on a plate. That's .... come on. You can't call me out on this.

Can't remember the last time I ate spinach raw.  It's a good filler to add some green to a dish, but I always cook it.  Also, why eat spinach when arugula is sitting right there?

We do a lot of spinach salads. Baby spinach, tomatoes, fresh mozzarella. Good stuff.

I don't like spinach that much, but I grow it and eat it to feel virtuous. I know it's good for me.
It's really not bad in a salad with some strawberries and sliced almonds with homemade poppyseed dressing. Or kalamatas and feta and pecans with a nice vinaigrette. It doesn't come naturally to me, but I still enjoy it.
It beats the way my mom used to heat a can of spinach in a saucepan with vinegar and call it a dinner vegetable.

The only way I like raw spinach is with a vinegar/milk dressing my grandmother made, but she's been dead for over 30 years and I don't have the recipe.

The wife of a friend made a dish that alternated filo pastry with spinach leaves and ricotta cheese. It was delicious.

It was:
Filo
Cheese
Filo
Spinach
It was ~10 layers.

Try this...
Cook some Spinach in olive oil in big pan. Add a little chopped garlic and a pinch of salt. Add some Parmesan cheese while cooking. Damn, now I like Spinach after 60 years of hating it.

Sounds great but fark if I am making Filo. Can you buy it pre-made in a store?

Well, you can make spinach pie, spinach and hard boiled egg, spinach souffle, spinach salad, spinach and cheese ravioli, spinach tortillas, spinach and grits, boiled spinach, spinach omelette, spinach crepes, chicken and spinach wraps, creamed spinach, spinach artichoke dip, spinach quiche... and that's about it.

Is it the flavor or consistency?   I don't mind it, actually like it as a salad with warm bacon dressing. I definitely prefer it as an ingredient instead of the main star.
My brother however hates it and says it's like spongey lettuce with to much chew.

Finally found some Chinese water spinach last week, and sauteed it with garlic, then added a bit of fish sauce and oyster sauce. It was damn tasty.

I'm also a fan of collard/turnip/mustard greens. Did collards a couple days ago in mustard oil with garlic, a little salt, and some nice French mustard. Really hit the spot with salmon and rice.

Joey Jo Jo Jr Shabadu: Can someone summarize the link?  I'm not watching a video.

Spinach gnocchi is amazing though.

Apparently spinach contains oxalic acid which keeps your body from absorbing the nutrients in spinach.
Cooking it removes the acid, releasing and allowing you to more easily absorb all the good stuff in it.

Growing up for some reason i loved the canned spinach the cafeteria ladies served in elementary school, still love the stuff. Ive grown to like it in all the other ways too...

I make a spinach pizza that guests go pretty wacky over. Here is what I do:

Wolfgang Puck's pizza dough recipe. Find it. It is everywhere.

The topping:
Obscene amount of spinach. Chop it finely.
Obscene amount of cheddar cheese. Grind it coarsely.
Obscene amount of garlic (minimum 12 cloves) I've gone way beyond. Chop finely.
Pinch salt, pepper, hot seeds, yadda, yadda.
Glug glug of oil, high smoke point preferably
Mix thoroughly in a bowl. It will look like a swamp on a summer day.
Scoop onto waiting pizza circles. Spread to edges.
Put into hottest oven possible for seven minutes.
Enjoy skeptics on their knees. Mock them and their cretinous mythologies.
My wife "denudes" each slice to lower the carb intake.

I don't mind it appropriately positioned in an ensemble cast, as you say.
It's the flavour mostly... very metallic, and not much else going on.  tbh I'm not a big fan of vegetables or greenery in general, I never eat a 'meat & 2 veg' meal.

Spinach dressed with white vinegar/olive oil/dijon mustard
Feta cheese
Toasted pine nuts
Chopped dates.

That is all.

the idea of spinach and strawberries almost makes me angry.
spinach is a tryhard partypooper while strawberries are raindrops on roses... and the notion of ruining them with spinach!
And it's  ձႣնβႱⵟ  ჁმGΣ  because I'm resolutely not a fan of mixing savoury and sweet like that in general.
eg fruit and meat... no, no, and no

I'm sure for those who have different preferences to me, your recipe is delicious.

Quiche
Hamburgers
Salad

I grew up with canned spinach soaked in vinegar. we were poor. I am not a huge spinach person, prefer romain and caesar dressing with added anchovies or a salad with bleu cheese.
occasionally I get an itch to eat canned spinach with malt vinegar so I do.
raw spinach and kale in any form but garnish are not really my thing.

For those who want to get laid like a king.  I usually make it without oysters.  Awesome and epic as a side with prime rib, steak, pork chop, chicken, anything.

I should try it that way.  We do it up as kangkung belacan, which I like, but my wife is way too heavy-handed with the belacan (fermented shrimp paste) when she makes it herself.  It ends up feeling like I'm eating ditch weeds cooked in the muddy water it was harvested from.

Yeah, I saw a lot of recipes with belacan while looking around for ideas. I'm generally on board with that, and already have a block on hand, but it would guarantee my wife wouldn't eat the end result. I used the sauces as somewhat of a compromise, and we were both happy with the outcome.

I do something similar.

Spinach
Red onion, sliced thin
Strawberries, sliced
Blueberries
Feta cheese, crumbled
Candied walnuts
Red wine vinegar vinaigrette, slightly sweetened

Add a protein if you want.

Fry bacon in cast iron pan, remove bacon, leave bacon fat (add EVVO if needed), saute some minced garlic briefly (no more than 30 seconds), add baby spinach, as it starts to wilt, add parmesan cheese. Serve topped with the crumbled bacon pieces. If ambitious, toast some pine nuts and sprinkle those on top too.

BTW, Alton Brown's recipe for spinach salad is killer. Just had it last night. Dressing is bacon fat, dijon, red wine vinegar, and a pinch or so of sugar, kept warm. Besides spinach, also in the salad are sliced hard-boiled eggs, slivered red onions, and mushrooms (which I omit in favor of assorted sliced mini-peppers.

HighwayBill: ... palak paneer, lamb saag...

I always forget the difference (look, my Hindi is egregious, and tainted by Guj'rati no less) and then have to tap it up:
palak == spinach.
saag == damn near any kind of greens, mustard especially. spinach may or may not play a role.

I blame restaurants for using the terms interchangeably.

a friend taught me to put freshly ground black pepper on strawberries, holy-wow is that ever good! dash of white pepper ain't hurt neither. so, now I am entirely amenable to strawberries' presence in salads.

I'm just glad the wife now loves to eat spring-mix, rocket-mix, even babby spinach mix... but only when I do one of the usual kickass scratch dressings lol.

otherwise I do just blanch it on the stove, or sometimes cook it down into a pot-likker type situation.
