Use evaporated for fudge, not condensed. Its better when it can pull like a soft taffy

I use both, along with cream of coconut  and lots of Puerto Rican white rum to make coquito.

The biggest effort in prep is the double boiler part w/ the egg yolks and evaporated milk.

I can't remember the last time I needed sweetened condensed milk. I have literally never needed evaporated milk for anything in my life, and I'm pretty sure we never had any growing up. I legitimately don't even know what it's used for.

Condensed milk, you can make arequipe with it (or dulce de leche for the non-Colombians).

Even if you know the difference between sweetened condensed milk and evaporated milk, it is startlingly easy to purchase the wrong one.

How? One cost nearly 3 times as the other and come in a shorter can.

I don't understand the confusion.  Condensed milk is literally God itself in a can, and evaporated milk is... some baking ingredient or something, I dunno.  One of them is suitable for pouring over ice cream or fruits or cookies or just eating it by the spoonful straight from the can, and the other is... well, maybe you cook with it?  It's pretty obvious which is which!  Must be a weird American thing to get confused about it.

Evaporated + marshmallow fluff = creamier.  Condensed = denser

Evaporated is good in simple pumpkin pie.  I use sweetened condensed in a simple key lime and in kheer.

I don't make any of those. I don't think they were major things in my family. Actually I don't think we cooked much with dairy at all.
Maybe it was a cultural thing, then.

The only reason it works with fluff and not straight mallows is because the mallows are all lightly coated with starch to keep them from combining like a giant blob. So fluff + evap = creamiest, mallow + evap is middle, and mallow + condensed = clay

Everytime I open a cap of evaporated milk there is stuff inside.  It is never evaporated.  I am so confused.

I guess those that say they never use evaporated milk have heard of either Tres Leches or flan.

Either will work in coffee in a pinch. Or you could just have black coffee. Evaporated gave mom a break when I was weaning kittens.

You can make mac and cheese with just noddles, evaporated milk and cheese.  It needs no extra thickening, makes decent cheese sauces in general.

Condensed milk is what is used in Thai tea and Vietnamese coffee.

I finally found lactose free sweetened condensed milk so I picked up some Key lime juice and as soon as I can get to the store that carries pasteurized eggs I'll be making the first key lime pie I've had in like a dozen years.

Condensed milk also makes fantastic hot chocolate.

There are some who call me Tim: I just learned that condensed milk sandwiches are a thing.  I am so anxious to try one of these


oh, hells to the yes!!! you absolutely see it in Taiwanese-style milk tea cafes (e.g. Saint's Alp in the US) - toasted 台式软面包 (similar to Texas toast in thickness, but much softer and completely different crumb/texture) and then spread with peanut butter or condensed milk (my recommendation: get one of each, and slap it together!) and also in HK-style "Chinese western food" diners.
