Wife and I travelled Amtrak from Boston to SFO. We enjoyed the experience immensely, and both the service and the food were very good. Staff was Black and Hispanic, and very professional. The trip was more expensive than flying but way more relaxed.

Suggestions: get a full sleeper cabin (has it's own bathroom, otheriwse you use a shared one)

Observations: newer equipment used west of Chicago. If going from the east coast, the equipment is older. You'll have a layover in Chicago, but if you've booked a full sleeper compartment, you can use the first class lounge in Chicago, and all your meals are included.
