I know someone who refers to tortillas filled with salad fixings as a walking salad. Your mileage may vary.

I've never gone wrong with a cucumber sandwich. I'll put some hummus, cucumber, cheese and a bit of vinegar and oil.  Comes out great.

My VP gave me the recipe and they're delightful

A regular for me is warm garlic naan with hummus, feta, spinach, onions, tomatoes, peppers and a little balsamic or reduction thereof.  Or some spicy ajver if I have that on hand.

Warm naan does make good sandwiches.

I like spreading it with chèvre (so it just starts to melt to make a bit of a sauce), and then topping with mixed greens and folding in half.

If I don't have chèvre, to get some acid to balance things out, I'll add some olives or pickled banana peppers.  I try to avoid salad dressings as I find it drips and makes a mess as naan doesn't have an open crumb like a sandwich bread

Warm naan, chèvre and thinly sliced pear is also a good combination as a snack.  (Slice it up like a pizza).  I'll sometimes also sprinkle a bit of crushed red pepper before fanning out the pear slices.

well, i WAS gonna make a MFTD some week on "YOUR favorite vegetarian sandwich! is a taco a sandwich? a cheese stuffed arepa? a falafel pita? who can really say?"

but damn CLAIRE beat me to it?

her's is a fail though: lacks CHEESE. i wasn't gonna limit it to VEGAN sammys
