Oooo, i like BUTTERSCOTCH CHIP better than chocolate chip.

But chocolate chip -with pecans, cooked chewy- CAN be nice as well

love-love-lurrrve butterscotch chips, but they're a little too sweet on their own? in childhood, whichever Aunt used them would also use bittersweet/semisweet chocolate bits, which gave it a nice balance. or they'd also make chocolate cookies with butterscotch chips, now that is/was quite a treat!

The only thing missing from that are ginger cookies. To this day I don't eat one without thinking of my Grandma who always had some around (the recipe was her mother's). I think the trick was the couple of Tbl. of bacon grease she added. It really bumped up the flavor of the molasses and spices.

Grandma Klug's Ginger Cookies

Cream together:
Scant 2/3 c. shortening
2 Tbl. bacon grease
1 c. sugar
4 Tbl molasses or sorghum
1 egg

Sift together:
2 c, flour
2 tsp. baking soda
1 tsp. ground ginger
1 tsp. cinnamon
3/4 tsp salt

Blend all ingredients. Roll into balls approximately 1" and roll in granulated sugar. Bake at 350° 8-10 minutes.

2.5 secret ingredients: fresh ground cardamom, home-made candied ginger, and rolled in the leftover ginger sugar before baking.

I might have to try your Grandma's bacon grease though, for a 3rd secret ingredient.

Wait, I just remembered - they're more commonly known as "beliscão de goiabada," because they're made with dough that gets folded over and pinched shut at the top.

I don't use cardamom in my Triple Ginger cookies, which is basically grandma's recipe with candied ginger and ginger sugar like you do. I used to get the sugar by the pound back when I worked at Penzey's. They import theirs from Australia and the bottom of the boxes was always filled with sugar leftover that employees could take home for free.

Try the cardamom if you have the inkling, I think it adds something really special, but only when they're right out of the oven... by the second day it's mostly gone.  It's probably not worth it if you're making them for friends and family, but dangit, I cook 'em for ME and if I just love how they taste hot and fresh.

I just might do that. I keep cardamom on hand for Pulla  (Finnish cardamom bread) and brown butter cardamom cookies.
