So the entire recipe is basically "Bake one f*cking sweet potato for 2-1/2 hours at 275F, then broil it for a minute or two so the skin is crispy. Cut it open and top it however you want." And this is so mind blowing that it took a pretentious article with several name drops in it.

When I first moved to Japan I lived in a little semi-rural village at the end of a dead end road. One night a yakiimo truck quiiiietly came down the road and pulled into the parking. It decided to Sing The Song of Its People on full blast right outside my door. Scared the crap out of me. Not enough to put me off my appetite though.

Where I live now we never seem to get yakiimo trucks. Just the tofu trucks and junkers. Sure, the supermarket sells them but it's just not the same!

One late night, cold and lost and hungry and sober, I was wandering through town on my way toward home. I heard the call, didn't understand it, and handed over money without knowing what I was buying. It was among the most delicious things I ate in Japan.

I'll give the author credit for highlighting a recipe that showcases how something so simplistic can be delicious.  However trying to tie it to Beyond or Impossible burgers is just stupid.
