 I can not stand it raw.

Boil it for a few minutes in a brine, rinse the brine off, brings out the color and elevates the flavors  100 fold

Quick saute and it's really good, but raw broccoli is hard and the stems are inedible.

Broccoli slaw.  Mix it with lettuce, and all the other good salad stuff.

I don't like cooked broccoli, but I also don't like trying to gnaw a raw stump of it.  Slaw takes care of all my issues.

As mentioned above, thin broccoli matchsticks turned into slaw is excellent.  I will lightly steam it and use it as a bed for General Tso's Chicken instead of rice.

No.  Just no.

But...let take a moment to talk about my newest recipe I learned of and made:   Herring in a Fur Coat.   I had to make it because of the name, it looked pretty and my daughter-in-law is Belarusian.   It was (because I ate it all) delicious.   My husband who is a lot Slavic gave it the big side eye, though he did try it and said it was not as bad as he thought it would be.   He doesn't like raw broccoli either.

I like raw broccoli on occasion. Needs a dipping sauce. But even with the sauce, just on occasion.

I like it roasted. Cut into florets, salt and pepper, toss in olive oil, 400 F for about 15-20 minutes

Broccoli is a totally different thing with a little Maillard on it. Get some char in the oven or a sautee pan... delightful.

My guilty pleasure is lightly steamed broccoli with Best Foods mayo.

Broccoli is one of the things I'll be attempting to grow this season. I did alright with a couple starts last year. This year I'm going with seed.

I can't think of a vegetable I'd rather eat cooked than raw. I suppose I've never tried a Brussel sprout raw, but I barely like them to begin with.

Brussels sprouts have changed dramatically over the last decade or so. A new breed that's less bitter has taken over as the dominant crop.

Thinly sliced B sprouts as part of a slaw are awesome.

I do love stirfried broccoli. Interesting about the 90-min wait time. I'll try to do that if I have time for it.


There's also supposedly a health benefit to cutting garlic and then letting it sit for 15mins before cooking.

I don't mind it that much. I don't love it but I don't hate it. I'd rate it slightly below cauliflower but to a point that is almost imperceptible.

My non-magic trick with vegetables is to drown them a tiny bit in a sauce. Worcestershire is my favorite, but A1 is ok. Or a hot sauce. Depends on my mood. Just straight up veggies with no sauce? Ehhh, no thanks. Carrots, corn, green beans, and some others don't really need it but why not? Is somebody going to judge me for this practice?!

Broccoli smells like farts when it's cooked. I'd rather have it raw if forced to do so.

Steamed, with a bit of nice soy sauce. All you need.

I understand the North American urge to cover anything vegetable-like with a bucket of cheez but it's really not necessary.

Previous science, iirc, showed nuking it with a fat released more nutrients.

Any bowl of broccoli is better than a bag of chips, so I'll keep nuking it with parmesan, pepper, and salt.

Those look like tasty magma balls. If someone doesn't like broccoli, just have them eat one if those. The giant burn spot in the tongue will prevent them from tasting anything.

/I prefer a steam and a local Chinese food joint cooks the broccoli perfectly

Came here to say this.


It's also damn tasty in stir fries. Just cut the florets AND stems into 1/2" to 1" pieces so it cooks to tender, but not soggy. Great with a soy and black vinegar sauce (basically replacing the traditional acidity from lemon with that of the vinegar).

The "cut it up and let it sit for an hour" finding is actually interesting and very similar to findings about garlic.

Try slicing in half and browning the cut sides in bacon fat. Then add some bread and butter pickle brine (yes) cover and simmer til just tender. Top with crumbled bacon.

Exactly! I'd also add throw some fresh grated Parmesan on it just before pulling it out of the oven.

raw is fine with hummus or babaganoush, etc. - also slaw as people already mentioned.

for me, plain unseasoned steamed broccoli is seriously crack. you can also replace the water for steaming with any sort of veg/meat/seafood stock... (and while you're at it, steam an egg custard in a separate level of your bamboo trays)

but yeah, maillardification on any of the brassicas/cruciferous is truly where flavor-country's at.

I had a recipe for a slaw-like salad with shredded Brussels sprouts and pistachios with a lemon dressing that was pretty great. Pretty easy to make, as you just throw them all in a food processor, basically.

I don't mind broccoli, but I can't buy it in amounts that I can actually get through. I can't even have leftovers sitting around because they make the whole fridge smell like farts.

I will eat entire head of raw broccoli if nobody stops me. Stem and all. I do regret if anybody (including me) has to smell my breath before I can get my hands on some mints or gum, and I can't eat it in that quantity too many days in a row, but there are no consequences if I do it once in a while.

I also like it steamed. Or sauteed. Or cheese-doused. Or roasted, which is probably my favorite.  But my other half can't stand the sulfury flavor of cooked brassicas, even lightly steamed to the point of still being crunchy, so raw - whether it be broccoli, cauliflower, cabbage, I have yet to get him to try sprouts - is the way to go in my house. I really should make more slaws.

Roasted in a pan with diced bacon, then topped with panko and blue cheese and thrown under the broiler until you get brown and crispy bits everywhere. Technically, there's a vegetable in there, so it's healthy.

Roast or steam your veggies people. Boiling results in you pouring most of the nutrients down the drain.

Frying ends up with the good stuff in the oil.

Our local Chinese place does broccoli stems pickled in fermented soy stuff.  Also kohlrabi.  It's damn good.

Not sold on raw. I prefer steamed for 2 or 3 minutes, then chucked into a stir-fry.

I made a Katsu curry stir-fry last week, and it was very tasty.
