It's certainly proof that countries that developed it had a raging shiatload of hungry MFers that they had trouble feeding.  The explanation for most low/no meat oddball dishes is that people ate it because some other MFers had already made off with everything else to eat.  Get forced to do that for generations, it becomes popular in and of itself.  For a familiar to the U.S. version of the same effect, see the inexplicable number of devotees Spam has.  Ain't because someone looked at it and figured yum yum, it's because it's all they could get

tofu skin mmmmm! our every-possible-Asian-country joint across the street slices it into their pad thai, most poke-bowl places here offer it as a topping... and my long-missed convenience store down Brooklyn Avenue U had the most exquisite bbq fake-duck legs/thighs - fake skin, fake bones, and all.

I should really see if our local marche carries it...

oh, semi-csb in re skrimps pad thai and pokeymans bowls... so, one time were ordering poke-bowls for delivery...

me: don't forget to add tofu skin to yours, you love that stuff!
$mai_waifu: what! no!! I hate it!!! wait, what is it? I still hate it whatever it is!
me: remember how much you love that shrimp pad thai?
hers: huh? why? but... ok... it had all that yummy scrambled egg in it!
me: yeahhh... about half of that was not scrambled egg.

hers: fine, ok. *huffily adds tofu skin to poke bowl order*

The stuff is fantastic as dim sum.  They're made with the deep fried version of skin and come in little rolls drenched in sauce.
