I honestly cannot remember any Christmas where the oxtails were cheaper per lbs than the roast (you use the oxtails to make exceptional gravy).

I honestly cannot remember any Christmas where the oxtails were cheaper per lbs than the roast (you use the oxtails to make exceptional gravy).


When cooked right the oxtail is the most tender, flavorful part of the critter imo. I hope you don't just dispose of them after making gravy?

A sharp knife and the right cooking technique can net you a stack of serviceable-if-you're-not pretentious steaks for a random "I'd kill for a steak right now" meal.

To clarify, since I left the cut out.

Spend a few minutes checking out the London Broils, cut around the awful chunks, marinate/tenderize well.

Grill to your liking. Medium-rare was my go to until I found my real secret:

A 500,000 BTU flame weeder for about a split-second to finish it off on each side. Rare in that case. It comes out medium-rare after a quick blast from that thing. Blue rare from appropriate cuts are amazing with that thing, too.

This. Learn how to break down a beef top round. Go to Costco or a restaurant supply store, if they have them in stock. (Lately, it's been a challenge.) Spend 3 hours breaking it down & packaging it. Eat on it for months.

I've been feeding the wife sushi and filet mignon this week (she is recuperating from surgery), and tonight it will be sushi and a flank steak that has been soaking in red wine since 6am.

Simply this. But they don't have a lot of awful chunks, the butchers at the local store do a good job.
But it isn't just for grilling either. Use as stew meat... a little lean for ground beef, but that makes it awesome for stir fry. Just cut and marinade appropriately.

See above... it was $3.97/lb.
Another thing that works nicely is to buy a ribeye roast, the whole rack, and have the butcher dice it up into 1 bone steaks 1.5"+ thick. Take them home, vacuum pack them and toss them into the deep freeze. Last time I did that it was $5/lb... for ribeye steaks.
Bought a bunch of 1lb packs of ground bison on the "sell by" date, they are just fine. Those were reduced to $7/lb and well worth it. Bison makes the best burgers without question.

Anyway, it's pretty affordable even now if you watch for sales and stock up.

Stay away from the prepackaged microwaveable lamb shank meal sold at Costco. It's the same frozen garbage that a lot of places tried to slide past Ramsay on Hell's Kitchen.
